Today is World Environment Day which focuses attention on important environmental issues. According to the United Nations, World Environment Day is commemorated each year on June 5th. It is one of the principal vehicles through which the United Nations stimulates worldwide awareness of the environment and enhances political attention and action.
Environment Day aims to raise awareness of the importance of respecting and doing your bit for the environment.

Our environment includes everything around us and that means the places we live and the places we go. Like most things, I think it all starts at home. Our homes are a place where we should feel safe and protected. My home is my haven and I try to keep it a place where I can feel relaxed and comfortable and where others can feel welcome.
My house never looks perfect for sure. It’ s still full of stuff even though I made every effort to minimize my stuff. Yet there is not many places I’d rather be. Our lives are so rushed and stressful and it is impacting on our health and well being. Relaxation seems to be a forgotten need or a luxury.
One thing I learned a long time ago is that no home is calm and peaceful if there is arguing and strife. Peace begins a home too. Believe me when I say life is too short to waste a day being angry.
Today would also have been one of my grandsons, our little Pumpkin’s, birthday had he lived, Now he’s celebrating in heaven. I’ll be saying a special prayer today remembering DS#3 and his wife and all parents that have lost a child. This I know for sure, losing a child is like loosing a part of yourself.
Although we seem so far apart,
You're always here within our hearts.
You filled our lives with joy and pleasure
You were to us a precious treasure.
A little while shall pass and then,
We'll see each other once again.
Loved, remembered and held so dear,
In minds and hearts you're always here.
Not every day will be a good one, but there is something good to be found in every day. Take the time to look for it.
Our environment, the world in which we live and work, is a mirror of our attitudes and expectations.

WHAT’S NEW IN THE KITCHEN
There is a food holiday to celebrate every day of the year!
It’s Sausage Roll Day!
Growing up my paternal grandmother made Kolaches which were a roll filled with fruits or cheese. But I discovered that they are wonderful filled with sausage too. So the recipe for today is an easy way to make them.
Easy Sausage and Egg Breakfast Kolache
Serves: 8
5 eggs
1/2 lb. breakfast sausage
1 can of large biscuits
shredded cheese
Preheat the oven to 375 degrees. Cook the breakfast sausage in a large skillet. Drain any grease from skillet. Beat 5 eggs and pour into skillet with sausage. Cook for about 1 minute just until eggs aren't runny
Flatten out each biscuit. Add mixture and cheese on each biscuit and wrap dough around mixture. Place seam side down on ungreased cookie sheet.
Bake for 13-15 minutes or unitl tops are golden brown.
PRAYER REQUESTS
A friend has asked for prayers for her oldest son's wife who has been diagnosed with Rheumatoid Arthritis and is dealing with all kinds of restrictions. And for her youngest son's wife that is in the hospital for a hip replacement and it has turned out to be much more than that. Then, for her daughter who is on vacation in Italy that may she come home safely.

Protect our military
as they discharge their duties
with the shield of your strength,
may the power of your love
enable them to return home in safety
that with all who love them
they may ever praise you for your loving care.

I became so excited at the mention of Kolaches, and just called in my DH to read. Honestly, there are few of his family's Polish recipes that I'll eat, but this sounds like a winner.
