ON THE BRIGHT SIDE
The moments of our lives may be bright with possibility, dark with fear or sadness, or even plain everyday gray, but God's glory never fades. May God's glory shine into the exciting lights, upsetting darks, and boring grays of your every day.

Life is a Special Occasion!

Today is World Sauntering Day which is a day to saunter here and there, wherever you go.
You can spend your life walking through life, jogging through life, or being dragged through life. But, life is far more enjoyable, if you saunter through it. Its doubly true if you saunter with a friend or loved one.
Sauntering is not a walk, jog, trot, or run. Sauntering is a form of strolling. Sauntering is a very casual, yet stylish, form of movement from point A to Point B. The dictionary defines sauntering as walking along slowly, happily and aimlessly. Sounds like a grand way to get around to me.
Sauntering Day is your opportunity to head out into the world and approach it with a deeply relaxed air, a moment of pure clarity and joy, all while enjoying the beautiful world around you and everything it has to offer.
If you can't see the Bright Side, polish the dull side
THOUGHT FOR TODAY
I think that I cannot preserve my health and spirits unless I spend four hours a day at least – and it is commonly more than that – sauntering through the woods and over the hills and fields, absolutely free from all worldly engagements.
Henry David Thoreau
Moving around slow and easy is the only way I move these days so this is one day I can truly celebrate. I don’t do hills much at all anymore and now I’m living in a house all on one floor, I don’t have to do stairs either. I can tell you that my knees appreciate that for sure. Ha!
There is a lot of beauty in this world and taking time to enjoy it is important. In the busyness of every day living we need some time to slow down and take in the scents and sights around us.
I did a walk thru with the new buyers at the old house on Saturday. Saying my final farewell to the old house was bitter sweet. The rose bush was at it’s finest! The closing is to be on Wednesday and with the good Lord’s help, I will finally be able to close that chapter of my life and start a new one.
I hope you all have a GREAT start to this new week. Happy Monday!
Nature is painting for us, day after day, pictures of infinite beauty if only we have the eyes to see them.
John Ruskin
WHAT’S NEW IN THE KITCHEN
There is a food holiday to celebrate every day of the year!
It’s Eat an Oreo Day which celebrates the best selling cookie in the world, which were first made in New York City in 1912, when they were originally called Oreo Biscuits. Oreos nowadays are both vegan and kosher. Previously, they used to be made with lard (trans fat) but since the late 1990s Nabisco
started making them with non hydrogenated vegetable oil in an effort to make them healthier. Many people eat them by pulling them apart and eating the inside first. They are also commonly dipped in milk.
There are many varieties of famous Oreo cookies and the types sold vary per country. With well known varieties including the classic, double stuff, peanut butter, cool mint, and chocolate. One of the first flavors introduced was lemon meringue. The famous slogan, Oh!, Oh! Oreo!, was introduced in 1950.
These delicious cookies are also used to make a variety of desserts so I’m sharing an easy dessert idea with you all today.
No Bake Oreo Layer Dessert
An easy no bake dessert with layers of Oreo crust, cream cheese, chocolate pudding, Cool Whip and more crushed Oreos.
For the Crust:
1 package Double Stuff Oreo Cookies
1/2 cup butter, melted and slightly cooled
For the Cream Cheese Layer:
8 ounces cream cheese
1 cup powdered sugar
1 small tub Cool Whip
For the Pudding Layer:
1 box instant chocolate pudding
3 1/2 cups milk
For the Topping:
1 small tub Cool Whip
Make the Crust: Place the Oreo cookies in a large ziploc bag and crush with a rolling pin. The pieces should be in small crumbs, but still a little chunky, not completely fine crumbs. Set aside 1/2 cup of the crumbs for the topping, then transfer the remaining crumbs to a 9 by 13 inch pan and use a fork to mash them up a bit. Pour the melted butter over top and use the fork to combine, making sure that all of the crumbs are moistened. Press into an even layer on the bottom of the pan. Refrigerate while the cream cheese layer is prepared.
Make the Cream Cheese Layer: In a mixing bowl, beat the cream cheese on medium speed until light and fluffy, about 3 minutes. Reduce the speed to medium low and gradually add the powdered sugar until it is all incorporated. Increase the speed to medium and beat for 30 seconds. Using a rubber spatula, gently fold in the Cool Whip. Spread in an even layer over the crust. Refrigerate while the pudding layer is prepared.
Make the Pudding Layer: In a large bowl, whisk together the pudding mix and milk for 2 minutes. Let sit
for 5 minutes to allow it to set. Use an offset spatula to spread the pudding in an even layer over the cream cheese mixture.
Spread the remaining 8 ounce tub of Cool Whip on top and sprinkle with the reserved Oreo crumbs. Cover and refrigerate for at least 4 hours before serving.

Not having to do stairs is a blessing indeed! Good to hear the closing is proceeding as planned. Glad you had a chance to see your roses blooming one last time.

I'd not heard the term 'saunter' in so long!
For some reason, I attach it to an image of someone like Bat Masterson sauntering 'round in his derby hat. Or Clark Gable, even.
I'll keep my fingers crossed for the closing! I saunter everywhere I go. Just getting too old and too fat to walk at any speed. I can only imagine that leaving your home is bittersweet.
