Todays Cinco de Mayo which has come to signify Hispanic and Mexican pride and a time to celebrate the rich culture.
This holiday is celebrated by Mexicans and quite a few of others too, but especially the Hispanic community in the U.S. It is a time of song, dance, partying, and in general a time to be proud to be of Hispanic descent.

As far as I know, I have no hispanic roots in my family tree, but that doesn’t mean I won’t be celebrating today. I love Mexican food and wouldn’t pass up a day to have some. So many of our celebrations include food.
I’m thankful for all the cultures in our country which have introduced many good foods to my table. One characteristic of American cooking is the fusion of multiple ethnic or regional approaches into completely new cooking styles. For example, spaghetti is Italian, while hot dogs are German.
With the exception of one day, this week has been a chilly wet one here in northern Ohio and that means it’s the perfect time to cook and turn the oven on. Ha!
The pictures today are of my favorite place to be, which is the beach. I’d love to be soaking up some sunshine on a sunny beach somewhere about now

WHAT’S NEW IN THE KITCHEN
There is a food holiday to celebrate every day of the year!
It’s Hoagie Day!
We all love food, which would explain why you’ll find so many food themed days to celebrate throughout the year should you want to. So it’s not much of a surprise that this very special sandwich would get its own day too!
Hoagies are also known as a sub, a wedge, hero, Italian sandwich or grinders. What you call them mainly depends on the region you live in. Here they are mainly known as sub sandwiches. This is not a Mexican food but said to have been started by Italian workers in the shipyards of Philadelphia back in 1953.
To make a great hoagie sandwich of your own you slice a soft or crispy long bread roll, throw in some of your favorite cold cut slices, and cheese. If you want to be fully authentic, don’t stick mayo in there, use a good quality olive oil and some Italian herbs instead.
Finish off with some tomato and lettuce for a bit of extra crunch!

I would imagine Mexican restaurants will be busy today. Burritos are my favorite. Suppose to be 105 degrees here today.

That's funny about Hoagie Day coinciding with Cinco de Mayo!
While I'm a huge fan of putting mayo on most anything, I love the idea of using olive oil and herbs instead. Yay (and yum!) that it's now available in many flavors!
We went out for Mexican take-out! So good. The restaurants were b.u.s.y. Loved your pictures. The beach is my favorite place in the whole wide world. And I live in land-locked Kansas.
