Today is May Ray Day which celebrates this turning of the seasons, and encourages us to get out and enjoy it! Welcome the sun back into the warming sky and get outside. Our body craves the sun. It’s actually essential to the utilization of vitamin D, which is required for strong healthy bones, along with a collection of other healthful things. Studies have shown that time in the Sun can be good for one's physical and mental health. May Ray Day is your reminder to go outside and soak up some sun in the great outdoors.

After some sunny and very warm days, our temps are much cooler here today and they say we’ll be lucky to see 60 degrees, but the sun will still be shinning. Tomorrow we’re to be in the 70’s. It’ was too early for us to have been up close to 90.
I love this time of year when the sun returns and the days are longer. When I went after groceries this week I even picked up a few plants for my flower boxes. That is what is in the picture above. I have four of these which I’ve set out along the edge of the car port. Hopefully they’ll grow and add a little color.
Also shown in the pictures today are a few of my grandchildren enjoying the fresh air and sunshine!

WHAT’S NEW IN THE KITCHEN
There is a food holiday to celebrate every day of the year!
It’s Pizza Party Day !
Pizza is often considered by many as the perfect party dish. A single pizza can feed a lot of people, it can be easily made at home or ordered from a restaurant, eating it does not require utensils or fancy dishware, and most importantly it is delicious even when consumed cold.
I found this recipe for pizza rolls to share today. They would make a great party appetizer.
HOMEMADE PIZZA ROLLS
1 jar pizza sauce
3 pkgs crescent rolls
1 tbsp. dried, minced onion
1/4 tsp. dried garlic powder
1/2 tsp. dried Italian seasoning
2 cups mixed cheeses such as mozzarella, Romano, and Parmesan
Preheat oven to 375 degrees.
In a small bowl, mix pizza sauce, onion, garlic and Italian seasonings. Let stand for 10 minutes. Separate dough into pieces. Spread 1 tablespoon pizza sauce down the length of each piece of dough. Sprinkle with cheese. Roll up from long end to the small end. Spray a cookie sheet with cooking spray. Put pizza rolls on cookie sheet.
Bake 15 minutes or until golden in color.

What pretty flowers! I always enjoy it when the sun is out. Like it bright rather than gloomy. I sawgoing to try those pizza rolls, they look delicious.
