This anniversary is one that I won’t be there in person to celebrate, but still I’m sending out wishes to them for a very Happy Anniversary! Seems like just yesterday we were dancing at their wedding.
Today is also Visit Your Relatives Day which encourages us to visit our relatives and loved ones. This day is intended to give us the opportunity to get closer to our relatives, and to build family ties and relationships.
It's easy to get out of touch with loved ones. We lead busy lives. A visit with the relative, is sometimes relegated to Christmas and a few other choice major holidays.
Time spent with family and friends is always a good thing.

Today is Cheese Soufflé Day
I found this easy recipe to share today. Although it is not a traditional soufflé it’s similar to one I’ve made in the past and it’s great for when you have lots of people to feed.
EGG AND CHEESE SOUFFLÉ
14 slices white bread
1 lb. sharp Cheddar cheese
3 c. whole milk
1/2 c. butter
10 eggs
salt
Pepper
Trim edges of 14 slices of white bread. You can save and toast to make bread crumbs for another dish, then cube each slice.
Grate 1 pound of sharp Cheddar on the large side of grater or using the grating disk of a food processor.
Put 10 eggs and 3 cups whole milk in blender or food processor with 1 teaspoon of salt (or less, to taste) and 1/4 teaspoon of pepper. Process until smooth.
Using a 13 1/2 by 8 3/4 inch casserole dish, layer the bread and cheese evenly along the bottom.
Pour milk and eggs mixture over. Melt butter and drizzle over top.
May be made in advance. This allows the bread to soak up the egg and milk mixture more.
Bake 1 hour and 15 minutes at 350 degrees.

Happy Anniversary to DDS#3 and his wife! Wishing them many more wonderful years together. Always good to visit relatives. I see son and his family quite often, but haven't seen my sister and brother in a few years. You are right, we do get busy with this and that and time seems to slip away from us.
