Today is World Red Cross Day which recognizes the efforts of National Red Cross worldwide. The Red Cross provides humanitarian efforts and disaster relief around the world, wherever it is needed. There are millions of Red Cross volunteers. May 8th was chosen, as it is the birthday of Henry Dunant, the founder of the Red Cross.

After a very chilly start to the day, 34 degrees as I type this, we’re to see 55 degrees later on and sunshine ! Thankfully this week is to be much dryer than last week was. I thought we’d have to start building an ark there for awhile. It seemed as though the rain would never stop. Yesterday the sun returned and for a few days in a row now things are looking dry!
It was a busy weekend which included a couple of showings by realtors on the old house. I also got an offer to buy and accepted it. If every thing goes well, the closing will be on June 21st. Both of the people that looked at it seemed to like it and said the house was beautiful. That made me feel good and very hopeful.
The week ahead looks to be a quiet one here. I hope to get a lot done in my craft nook. It’s quite a jumbled mess right now, but when I get it sorted out I’m looking forward to making good use of it and all the supplies I’ve got on hand.
There will be yard work to do too after everything dries out. It’s still very wet here. Maybe tomorrow or the next day.
The pictures today were taken Saturday evening when we gathered for a Toast to my oldest son who recently passed away. It was organized by one of his classmates for those that knew and loved him.

WHAT’S NEW IN THE KITCHEN

It’s National Coconut Cream Pie Day!
Coconut is full of diverse health benefits from protecting against heart diseases to preventing tooth decay!
EASY COCONUT CREAM PIE
2 small pkg.instant vanilla pudding
2 cups cold milk
2 cups thawed Cool Whip, divided
1 cup angel flake coconut, divided
1 ready to use graham cracker crust
Using a whisk, beat pudding mixes and milk in a large bowl for 2 minutes. Stir in 1 cup Cool Whip and 3/4 cup coconut. Pour into crust and refrigerate for 4 hours.
Toast the remaining coconut and top pie with the rest of the Cool Whip. Top pie with coconut.
To toast the coconut, heat oven to 250 degrees, spread coconut in shallow pan. Bake for 7 to 10 minutes or until lightly brown. Stir often.

That was a nice gesture for your son's friend to arrange the toast. I am sure many memories were shared during the time together. Great news about your house, sounds promising indeed! Brrr with the weather, glad it is warming uo a bit.

I can remember collecting pennies every year for the Red Cross when I was in school Pam. That is probably dating me! How wonderful that you got to have a get together with your son's friends in remembrance of him. I cannot imagine the pain of losing a child, but my Todd has lost all three of his sons and I know how he feels. My heart and prayers continue to be with you and the family.
