Thankfully I’ve got a lot of babies in my life. My own children are all grown up with children of their own and I’ve had the pleasure of cuddling with lots of babies.
One thing I know for sure is that even though our children grown up, they still remain our babies.
We got lots and lots of rain here yesterday and this morning I woke up to more of the same. The pictures today were taken in the patio room as I watch the rain pour down in bucket fulls.
Hopefully it will dry out enough to mow the yard here tomorrow. It’s looking like the only dry day we’ll be having this week.

WHAT’S NEW IN THE KITCHEN
There is a food holiday to celebrate every day of the year!
It’s National Truffle Day!
The first recipes for chocolate truffles appeared in the 1920s. Today there are three main types: American, European, and Swiss. Each type of truffle has a slightly different twist, but they all include a creamy ganache filling and a topping like cocoa, coconut, or drizzled chocolate.
I probably will not be making any truffles any time soon but found a recipe to share with you all today.
Easy Chocolate Truffles
1 pound of chopped dark, semisweet, or milk chocolate, or a combination thereof
1 cup heavy cream
1/2 teaspoon vanilla
1/4 teaspoon kosher salt
Topping options for rolling the truffles: unsweetened cocoa, powdered sugar, chopped nuts, shredded coconut or sprinkles
Place chocolate in a heatproof bowl. Heat the heavy cream in a small saucepan just to the boiling point and pour the cream over the chocolate. Let it sit for a few minutes, and then whisk the chocolate and cream mixture until smooth. If you still have a few lumps of chocolate, quickly bring an inch of water to a simmer in the saucepan and place the bowl with the chocolate cream mixture over the simmering water (make sure the bottom of the bowl does not touch the water or you will scorch the chocolate) and whisk until completely smooth. Whisk in the vanilla and salt.
Refrigerate the mixture for 45 minutes to 1 hour, or until the mixture is the consistency of soft ice cream. If you take it out, and it’s too soft, keep refrigerating. If it’s too stiff, leave out at room temperature until it softens.
Using a tablespoon size scoop or spoon, scoop mounds of the truffle mixture onto a parchment paper lined pan. You will have about 30 mounds. Place pan in refrigerator for 30 to 45 minutes, or until the mounds firm up and are the consistency of stiff clay.
Assemble the toppings of your choice.
Take the mounds out of the fridge and using your fingers, form into uniform balls. Finish them by rolling between your palms into balls.
Roll each ball into the topping of your choice and place the finished truffle in a mini cupcake wrapper
You can store truffles in the refrigerator for up to one month. Makes approximately 30 truffles

First of all, many thanks for your comments on my blog. I have one more section to write on the ABCs of Gratitude and I'm most grateful for the comments. I've gotten some on Facebook as well. As for your grandchildren, if the two in the photo are an example, you probably can't help hugging and cuddling them!
We had really warm weather yesterday but were supposed to have storms last night. If they came, I missed them! However right now I'm looking out the office window and a sky full of puffy white clouds is slowly being taken over by dark gray clouds--so who knows what's coming!

My son is 47 y/o, and I still consider him my "baby." (Not to his face, of course!)
Love the accompanying photo of your tree's roots spreading out; that sort of makes me think of a family's roots.
