Today is All is Ours Day which highlights all the wonderful things in the world. Be aware of our surroundings and what exists in them. Think about the fact, that a lot of these things belong to everyone and that they should be shared with all people in the world.
All is Ours Day also aims to sharpen our sense of responsibility and to make us understand that we all share a wonderful world but also share the responsibility for it. A total different way to interpret All is Ours Day is to recognize the chances we have to live our lives. It is all out there waiting for us, we just need to reach out and grab it.

There are a lot of beautiful things and sights in the world but too often we miss them because we are too busy to look around and take them in. We all have the chance to watch the sun rise or set. We all share the moon and the stars too.
Yesterday we had snow, but today it’ll be close to 60 degrees with sunshine! It’ll be great to go outside with out freezing . Sunday will be even warmer. Slowly but surely the weather will even out. Thankfully we haven’t had any severe weather but some have. Tornados have done some devastating damage in some places in the south. The pictures today were taken around my house as the snow melted yesterday and the sun came out. It was quite noisy here as the chunks of ice fell off the trees.
Today I hope to be able to visit with DS#1 who is now in rehab. Thanks to DD and her hubby, I get to tag along with them for the trip. Nice that the weather is cooperating and giving us a great day to travel. I could only wish we lived closer.

Today is National Empanada Day
An empanada is a delicious Spanish and Portuguese type of stuffed bread. Empanadas can be served hot or cold as the main course or as a side dish. My SIL cooks up some delicious ones but I don’t have his recipe.
Empanadas are made by folding dough around a premade stuffing of chicken, beef, cod, or pork loin. Other ingredients include tomatoes, garlic, and onion sauce.
The recipe I’m sharing today uses crescent rolls for the dough, but I know you can buy empanada wrappers already made in the grocery store and I think I’d prefer them. Either way they are a tasty treat.
Beef Empanadas
1 lb. lean ground beef
1/2 small red onion, finely chopped
Salt and pepper to taste
1 tablespoon ground cumin
1tablespoon chili powder
1 can, 8 oz. tomato sauce
1 can refrigerated crescent dinner rolls
1 egg white, beaten
1 egg yolk, beaten
Into 10 inch skillet, place ground beef, onion, salt and pepper. Cook over medium high heat until beef is browned; drain. Stir in cumin, chili powder and tomato sauce. Reduce heat to low; cook 5 minutes longer.
Heat oven to 400°F. U
nroll dough into 1 large rectangle; press perforations and edges to seal. Using 4 inch round cutter, cut out 8 dough rounds.
To make each empanada, place about 2 tablespoons beef mixture onto center of each dough round. Using pastry brush, gently brush edge of each round with beaten egg white. Fold dough round in half to cover filling; press edge together to seal. To make decorative edge, fold dough over itself so that it forms a rope look. Lightly brush tops of empanadas with beaten egg yolk.
Bake 10 to 12 minute or until golden brown. Serve warm.

Why, I've never heard of an empanada ... but it sounds wonderful!
There are many times I've stared in awe at the night sky; and felt a peaceful sense of camaraderie with all who might be witnessing the same thing.
YAY for DS#1's transfer to the rehab. I hope you all had a sweet time together.
