Today is Earth Day which aims to inspire awareness of and appreciation for earth's environment. Earth Day was founded by Senator Gaylord Nelson, was first organized in 1970 to promote ecology and respect for life on the planet as well as to encourage awareness of the growing problems of air, water and soil pollution.
Typical ways of observing Earth Day include planting trees, picking up roadside trash, conducting various programs for recycling and conservation, using recyclable containers for snacks and lunches

Due to the sudden and unexpected death of my oldest son on April 13th, I’ve been offline for awhile now. There were just no words at all to share with you all.
Although we were all completely devastated I have have to say that the outpouring of love from family and friends have helped so much to carry me and my family though a very difficult time.
The difficult days are not over, but in an endeavor to keep in contact with family and friends I’m going to try and continue my daily post.
Today is our family Easter celebration and those of us that can will gather as we usually do to celebrate the holiday. Life and love goes on and we must
remember to give thanks for each day and for all those we love.
My oldest son lives on in the love he shared with all he came into contact with. He’s always close as we hold him in our hearts forever. We honor him by sharing our love today and always.
The wonderful memories we have shared in the past have also helped to carry us though this past week and today we’ll be making some new memories. Each day is such a gift. One to be treasured and to make the most of the best way we can.

WHAT’S NEW IN THE KITCHEN
There is a food holiday to celebrate every day of the year!
Today is National Jelly Bean Day which is a time to enjoy gobs and gobs of jelly beans. Anyone who loves jelly beans, knows they are not just for Easter. Sure, they are very popular at Easter, but they are also enjoyed year round. The flavors are limited only by the imagination of candy makers.
Today's recipe is for a cake made with jelly beans.
JELLY BEAN CONFETTI CAKE
2 c. flour
3/4 c. miniature jelly beans, cut in half,not licorice
1 c. sugar
1 c. butter, softened
1, 8 oz. pkg. cream cheese, softened
1 tsp. vanilla
3 eggs
1 1/2 tsp. baking powder
1/4 tsp. salt
Confectioners’ sugar
Heat oven to 325 degrees. Generously grease and flour 12 cup fluted tube pan or angel cake pan.
Lightly spoon flour into measuring cup. Level off. In small bowl toss jelly beans with 2 tablespoons of the flour. Set aside.
In large bowl, beat sugar, butter, cream cheese and vanilla until well blended. Add eggs, one at a time, beating well after each addition. Add remaining flour, baking powder and salt. Blend well. Spoon 1 cup of batter evenly over bottom of prepared pan. Stir jelly beans into remaining batter.
Spoon into baking pan. Bake in a 325 degree oven for 50-60 minutes, or until toothpick inserted in center of cake comes out clean. Cool upright in pan 10 minutes. Invert on serving plate. Cool and dust with confectioners sugar.

You and your family have been in my heart and prayers this past week. Incomprehensible. But! ... as you've written, honoring DS #1 and his legacy of love is a wonderful thing.
Hope y'all enjoy a most blessed family gathering today.
I think getting back to a routine helps after we lose a loved one, so trying to post every day will be good to do for you. So true life must go on, even though it will never be the same for you again. Good too to keep up with family fun events from the past. I hope it is a great celebration today with your family. Indeed your son and memories of him will live on in the legacy he left behind.
