Walking around things is something I’ve been doing a lot of here at my house. There are still storage bins full of things that I haven’t found a place for so I’m walking around them. It is nice though that all the downsizing I’ve done has paid off in the respect that everything fits into my new home, all be it, some of it is still packed away. I have boxes full of memories, and seasonal things that can’t be displayed all the time.
No longer having a basement or an attic to store things in, means that some things are just going to have to be stored where they normally wouldn’t be. I do have plenty of floor space and that’s a good thing. Guess I’ll just have to find more attractive ways to store them. That opens all sorts of possibilities.
Little by little it will all get done!

It’s Cordon Bleu Day!
This delicious dish is most basically described as a piece of cheese wrapped in a piece of ham stuffed in a chicken breast, breaded, and fried.
I love impossible pies made with Bisquick baking mix and I found this new to me recipe for Chicken Cordon Bleu Impossibly Easy Pie to share with you all today. It’s also a great way to use up leftover chicken and ham.
1 cup cubed cooked chicken
2/3 cup cubed cooked ham
1 cup shredded Swiss cheese
1/2 cup Bisquick mix
1/4 teaspoon salt
1/8 teaspoon pepper
2/3 cup milk
1/3 cup chicken broth
1/4 cup chive and onion sour cream potato topper
2 teaspoons Dijon mustard
2 eggs
Chopped fresh chives, if desired
Heat oven to 400°F. Spray 9 inch glass pie plate with cooking spray. Layer chicken, ham and cheese in pie plate.
In medium bowl, mix remaining ingredients with whisk or fork until blended. Pour over cheese in pie plate.
Bake 30 to 35 minutes or until knife inserted in center comes out clean. Let stand 5 minutes before serving. If desired, serve with additional potato topper and fresh chives. Serves 6.

That recipe does look good. I haven't baked with Bisquick in a long time. I will have to get some soon. We have been walking around a problem for months now, but I think in the next month things will be addressed which will be a good thing.

The Cordon Bleu sounds so yummy!
I love the concept of a 'walk around' day. Nothing permanent, mind you, but a cheerful respite!
I always believe it is best to just take one step at a time!
