Today is The Fourth of July which is the birthday of our nation. Today, we celebrate and enjoy the freedom that comes with the events that made this day so special. We enjoy the benefits of the freedom which they signed and ultimately fought for. For us, it is a time for baseball, hot dogs and family picnics. Summer is in full swing and life is good. The Fourth of July is not complete without parades and fireworks.

Most of the fireworks in our area have already happened. Our town started off the long weekend with fireworks on Thursday and I saw where several local communities had them on Saturday, but my neighbors up and down the street have been entertaining us every evening with firecrackers and I’m sure that will continue until they run out.
They say we may get some showers at some point today. I hope they don’t put a damper on anyones plans. Here at my house we need the rain so I’m not complaining. After a very pleasant weekend, things are about ready to heat up again this week with temps in the high 80’s and low 90’s and I’m sure everything will benefit by some rain. Today we’ll be in the mid 70’s.

There is a food holiday to celebrate every day of the year!
It’s National Barbecued Spareribs Day
Here at my house I don’t grill out much but that won’t stop me from enjoying some spareribs. I just let the slow cooker do all the work.
Slow Cooker Barbecued Ribs
3 1/2 pounds pork loin back ribs
1/4 cup packed brown sugar
1 teaspoon salt
1/2 teaspoon pepper
3 tablespoons liquid smoke
2 garlic cloves, chopped
1 medium onion, sliced
1/2 cup cola
1 1/2 cups barbecue sauce
Spray inside of 4 to 5 quart slow cooker with cooking spray. Remove inner skin from ribs. Mix brown sugar, salt, pepper, liquid smoke and garlic; rub mixture into ribs. Cut ribs into 4 inch pieces. Layers ribs and onion in slow cooker. Pour cola over ribs.
Cover and cook on low heat setting 8 to 9 hours or until tender. Remove ribs from slow cooker. Drain and discard liquid. Pour barbecue sauce into shallow bowl. Dip ribs into sauce. Place ribs in slow cooker. Pour any remaining sauce over ribs. Cover and cook on low heat setting 1 hour. Makes 4 servings.

I have heard of people putting ribs in the slow cooker; will have to try this sometime. We had a gathering of people over yesterday and were enjoying the neighbors' firework display put on :) Even the little one was enjoying looking at the sky and thankfully the noise didn't bother him.

Ribs sound wonderful! I have spaghetti sauce on the stove at Mom's. I thought we'd enjoy that tonight since she liked the last batch I made. Hope you are enjoying your day today.
I"m going to try the slow-cooker spareribs sometime this summer. (... says the gal who's never learned to use a grill. Ha!)
