Life unfolds in the present. The past was, and the future will be, but the present is all that ever is. When you live in the past or future, you miss out on the peace in the present. Rather than be wishing that things were as they were 10 years ago or how they could be 10 years from now, be grateful for what you have in your life right now. Gratitude brings us back into the present moment quickly and easily,

There is a food holiday to celebrate every day of the year!
Fresh Spinach Day
Fresh Spinach Day is our opportunity to put healthier food into our diets. Popeye the Sailor is right. Spinach is one of the healthiest foods you can eat. It tastes good, and there are many good recipes.
Chicken Florentine Pasta
1 pound Penne Pasta
4 whole Boneless, Skinless Chicken Breasts
Salt And Pepper, to taste
2 Tablespoons Butter
2 Tablespoons Olive Oil
4 cloves Garlic, Minced
3/4 cups Dry White Wine
3/4 cups Broth, More If Needed
1 bag Baby Spinach
2 cups Grape Tomatoes, Halved Lengthwise
4 ounces, Parmesan Cheese
Cook pasta according to package directions in lightly salted water. Drain and set aside.
Cut chicken breasts into chunks and sprinkle on salt and pepper.
Heat butter and olive oil over high heat in a large skillet. Add chicken chunks in a single layer and do not stir for a minute or two in order to allow the chicken to brown on the first side. Turn the chicken and brown on the other side. Cook until done, then remove chicken from the skillet.
Turn heat to medium. Add garlic and quickly stir to avoid burning. After about 30 seconds, pour in wine and broth, stirring to deglaze the pan. Allow the liquid to bubble up, then continue cooking until it's reduced by at least half . Note: If you don’t use alcohol in your cooking, you can use double the amount of broth and just leave out the wine altogether.
Turn off the heat. Add spinach, tomatoes, chicken, and cooked pasta to the skillet. Toss to combine; the spinach will wilt as you toss everything. Add plenty of Parmesan Cheese and toss to combine.
Serve with extra Parmesan

That pasta recipe looks delicious! I am going to make that soon. I like the idea of writing down our should haves etc and then throwing the list away and hopefully forgetting them.

Your pasta recipe sounds very similar to one of our favorite crock-pot dishes: Chicken breasts, frozen creamed spinach (YAY!), Parmesan cheese, white wine and DelMonte's diced tomatoes with basil, garlic and oregano. (Once my DH elected to buy a generic brand of the canned herb tomatoes and oh! ... what a disappointment that turned out to be.)
In honor of the day, I may throw a spinach salad together and call it lunch. :)
I love the idea of writing down the should haves and the could haves and then moving forward. Too many people live in the past. So unproductive. Cherish the memories, if you have them, but move forward!!
