My paradise place is the beach and that is what my pictures are of today. Whenever I need a break away from the woes of a hectic or frustrating day, I go there in my mind. A trip to the beach can be wonderful.
In reality I do love the beach, but I never get there often at all, except in my mind. On these hot summer days, the beach is one place we can take a dip in the water and cool off. It’s very refreshing and relaxing too.
Life's a beach, or so they say, and that's a saying that really applies to me. There are so many reasons why I love the beach that just thinking about them makes me want to grab my beach bag right now!

WHAT’S NEW IN THE KITCHEN
There is a food holiday to celebrate every day of the year!
It’s French Fries Day
Whether you call them French Fries, or Chips, this delicious treat is loved around the world, and French Fries day celebrates them.
Oven baked fries are a bit healthier than deep fried so here’s a recipe to try out today.
Extra Crispy Fries
For Seasoning Mix
2 Tablespoons seasoned salt
1 teaspoon chili powder
1 teaspoon dried basil
1/8 teaspoon cumin
1/8 teaspoon black pepper
For the Fries
3 medium russet potatoes
1 or 2 Tablespoons olive oil
2 Tablespoons grated Parmesan, optional
Combine seasoning ingredients in a small bowl; set aside.
Wash and peel the potatoes. Cut off the ends. With a very sharp knife, cut the potatoes into thin slices about 1/4 inch wide.
Add the fries to a large bowl and cover with cold water. Allow them to soak for at least 30 minutes but they can soak for as long as overnight. Place in the fridge if soaking more than an hour.
After the fries have soaked, drain, rinse, and lay the fries on a paper towel lined cooling rack to dry while you preheat the oven to 400 degrees. Blot the tops with additional paper towels to absorb any excess moisture
Line a baking pan with parchment paper or foil and spray with nonstick spray. Make sure the previously used bowl is dry and add the potatoes to it, add 1 or 2 tablespoons of oil and 1/2 to 1 Tablespoon of the seasoning mixture based on how much salt you prefer. Toss around to mix.
Evenly line the baking pan with the fries in a single layer. Don’t overlap or they fries won’t cook properly. Bake for about 30 minutes, flipping with a spatula once or twice after 15 minutes of cooking. Increase heat to 425 degrees and continue baking until the edges look a little burnt!
Sprinkle the fries with seasoning mix and Parmesan cheese, optional. Serve immediately.
Note: Use 1 medium potato per serving

Those fries look delicious!
The beach is always a fun place to go to, fun to see the waves and dip our toes into the cool water there. I know this time of year in Southern California the beach is a popular place to be at.

My paradise place is the beach too. I don't know that I will ever find my way to the beach again in this life but I know that I can close my eyes and feel the hot sand and hear the waves crashing on the shore. Have a wonderful day!!
