Life is a Special Occasion!

Today is International Day of Friendship, an official United Nations observance which promotes friendship among peoples, cultures and countries. Today is a time to encourage efforts towards peace, and to build bridges among different people. It is a day of respect for others, and a day to celebrate diversity.
If we all try just a little the world will be a friendlier, more peaceful place.
If you can't see the Bright Side, polish the dull side
THOUGHT FOR TODAY
A friend is one of the nicest things you can have, and one of the best things you can be.
Douglas Pagels
It is always important to be a good friend. Having friends is also about how to be a friend It is said that a person who finds a true friend has found a priceless treasure. A true friend is someone who has touched your heart and will stay there.
Thankfully many in my family are also my friends and many of my friends are like family.
We are called to love one another. Not always easy but something which proves more valuable each day.
I hope you all have a SUPER Saturday !
WHAT’S NEW IN THE KITCHEN
There is a food holiday to celebrate every day of the year!
It’s National Cheesecake Day
As I do have some fresh blueberries in the refrigerator I looked for a recipe for a cheesecake with blueberries and this is what I found. I’ll be saving this recipe for a day I can turn the oven on.
Fresh Blueberry Cheesecake Pie
1 refrigerated pie crust, softened as directed on box
1 package, 8 oz., cream cheese, softened
1 cup sour cream
2/3 cup sugar
2 eggs
1 teaspoon vanilla
Blueberry Topping
1/2 cup sugar
1 tablespoon cornstarch
1/2 teaspoon ground cinnamon
1/4cup water
2tablespoons lemon juice
2 cups fresh blueberries
Heat oven to 425°F. Slowly and gently unroll crust. Place crust in ungreased 9 inch pie plate; press firmly against side and bottom. Fold excess crust under and press together to form thick crust edge; flute. Bake 10 minutes. Reduce heat to 375°F. Bake an additional 4 to 6 minutes or until bottom looks dry and is just starting to turn light brown.
Meanwhile in a large bowl, beat together cream cheese, sour cream, sugar, eggs, and vanilla with electric mixer on medium high speed just until blended; pour into crust.
Cover edge of crust with strips of foil to prevent excessive browning. Bake 25 to 30 minutes or until filling is set but center still jiggles slightly when moved. Cool 1 hour at room temperature.
Meanwhile in 1 1/2 quart saucepan, mix sugar, cornstarch and cinnamon. Stir in water and lemon juice until smooth. Stir in 1 cup blueberries. Heat to boiling over medium heat, stirring constantly. Boil 2 minutes or until thickened and most of the berries have popped. Stir in remaining 1 cup blueberries.
Spread blueberry mixture over cooled cheesecake. Refrigerate at least 3 hours before serving. Store in refrigerator.
COUNTING MY GIFTS
It is one of the blessings of old friends that you can afford to be stupid with them.
Ralph Waldo Emerson
Counting at least 3 things every day that I'm thankful for. There is truly is always something to be thankful for.
4087. for friends, they are blessings for sure
4088. for cheese cake, any flavor will do
4089. for my oven, which is not being used at all these days
Enter into His courts with thanksgiving — and in His presence is fullness of Joy!
PRAYER FOR OUR TROOPS
Please pray for God's protection of
our troops and HIS wisdom for their
commanders.
Almighty and eternal God,
Protect our military
as they discharge their duties
with the shield of your strength,
may the power of your love
enable them to return home in safety
that with all who love them
they may ever praise you for your loving care.
AND bless our Police Officers, Firefighters
and Paramedics and EMT’s
We ask this through Christ our Lord.
Amen
GOD BLESS YOU ALL !

Only this morning I was hunting for a birthday card for my BF in Florida ... reflecting on how much her friendship means to me. (.....Tho' we're as polar opposites as can be!)
I've not much of a sweet tooth, but I'll never, ever turn down a slice of cheesecake!
