Life is a Special Occasion!

Today is a holiday with a crunch. It’s National Tortilla Chip Day! One might even suggest that it is a corny holiday. Just a few decades ago, Americans seldom ate Corn Chips and Salsa. It's popularity has grown immensely. Today is a tribute to that rising popularity of one of America's favorite munchies.
Celebrate National Tortilla Chip Day with a handful of crunchy, tasty corn chips and your favorite salsa or dip.

THOUGHT FOR TODAY
Keep Calm and Snack On
They say that the Doritos brand is the first toasted tortilla chip launched nationally in the U.S. And they are probably the first I ever had. I do love tortilla chips and salsa, but I also like Tortilla Cinnamon Crips. I’ve never made my own but have had them store bought. I found this recipe for them to try out and hope to do so soon.
2 tablespoons granulated sugar
1 teaspoon ground cinnamon
8 flour tortillas, 8 inch size
6 tablespoons butter, melted
In a small bowl combine sugar and cinnamon, set aside. Brush tortillas with melted butter. Cut each into 8 wedges. Arrange in single layer on baking sheet. Lightly sprinkle cinnamon mixture over. Bake in preheated 400 degrees oven for 5 minutes. Can be made ahead and keep in air tight container.
And this salsa sounds like the perfect dip to go with them.
Apple Pie Salsa
4 medium Granny Smith apples, diced
2 tsp lemon juice
1 cup light brown sugar
2 Tbsp butter
1 tsp cinnamon
¼ tsp nutmeg
1 Tbsp cornstarch
2 tsp vanilla
½ cup whipped cream
In large sauté pan, combine apples, lemon juice, brown sugar, butter, cinnamon, and nutmeg.
Cook over medium heat for 20 minutes, stirring occasionally.
Stir in cornstarch. Cook for two minutes, stirring occasionally.
Stir in vanilla. Remove from heat. Top with whipped cream.
This is best served warm
I love to have a crunchy snack and I do have a sweet tooth so this sounds like the perfect combination to me!
It’s supposed to be a rainy day here, but I hope to get out and about anyway. I have errands to do. I guess it’s a day to make my own sunshine !
I hope you all have a WONDERFUL Wednesday !

That dip with those chips could be very tasty combination! We made a taco salad the other day for dinner and crunched up some tortilla chips in it, very delicious!
betty
Ooh, that apple dip with cinnamon tortilla chips sounds like something I would like. I often tend to avoid salsa because I can't eat spicy food and everyone's sense of spicy differs. We're having chili for lunch today so who knows--there may be some tortilla chips to go with it!
Oh, that apple pie salsa and those cinnamon tortilla chips sound mightly delicious and like something the missionaries would love. I do believe that they must be a holiday for everything! Thank you so much for all that you come up with and all of your thoughts and quotes and ideas. You are a blessing in my life for sure! Love you to bits! xoxo
