Today is Boy Scout Day which celebrates the birthday of Scouting in America. On February 8, 1910, Chicago publisher William Dickson Boyce filed incorporation papers in the District of Columbia to create the Boy Scouts of America.
Scouting groups across the country celebrate this day. Often a cake will be served at the weekly meeting or on a campout. Scout Sunday, the Sunday nearest the 8th of February, will often be marked with a church service, followed by a pancake breakfast.
Cub Scouts and Boy Scouts offer a tremendously valuable program of life skills and values for millions of boys. It has been popular ever since Lord Baden-Powell founded Boy Scouts in the early 1900s in Great Brittain. The top award of Eagle Scout, is an accomplishment that reaps recognition, rewards, and benefits for a young man throughout his life.

Scouting is a valuable and rewarding program and I was involved in it for many years due to the fact that I had 6 boys. I think they all have some fun memories of the times they spent as a Boy Scout. Some of my grandsons have become scouts too and my oldest son is still in Scouting along with his son. They are shown in the picture above .
One thing most scouts learn to do is to cook. A lot of their activities are out of doors and they develop a hearty appetite. I remember the boys making lots of pots of chili over the years. DS#1 says they made chicken chili on one of their recent campouts. White Chicken Chili is an all in one meal of lean ground chicken, small white beans, and a combo of tomatoes, jalapeños, and spices to give it heat. Because ground chicken has so little fat, it tastes best if cooked quickly so it doesn’t dry out. Just a few minutes to cook the meat through, then add the rest of the ingredients for a quick simmer. Thicken with a little cornmeal and serve topped with grated cheddar.
2 tablespoons vegetable oil
1 small onion, chopped
1 tablespoon chili powder
½ teaspoon oregano
1 teaspoon ground cumin
1 pound ground chicken
1 10-ounce can Rotel, tomatoes and jalapeños
1 14.5-ounce can diced tomatoes
½ cup chicken broth
1 cup canned small white beans
1 tablespoon cornmeal
Heat oil over medium heat in saucepan. Add chopped onion and cook about 5 minutes, or until slightly golden. Add chili powder, oregano, and cumin to onion and stir; cook 1 to 2 minutes, or until fragrant.
Add ground chicken and cook until no longer raw, about 4 minutes. Add Rotel, diced tomatoes, chicken broth, and beans. Simmer for 5 minutes. Taste and adjust seasoning to taste. Stir in cornmeal and cook about 1 minute, to thicken. Serve hot, topped with grated cheddar and diced avocado.
Serves 4.
I don’t know what recipe their scout troop used, I found this recipe online and it sounds pretty tasty!
They say we may get some snow today and tomorrow. Needless to say, I’m not very excited about it, but then we haven’t had much at all so far this winter so I’m not complaining. Sounds like a good day to make some chili.

That is a wonderful organization with the Boy Scouts (and Girl Scouts). They teach so many useful skills in addition to having fun with the activities done :) I liked the recipe for the white chili; might have to make some very soon!
