Today is National Chocolate Covered Peanuts Day, or some sources refer to this holiday as Chocolate Covered Nut Day. This holiday celebrates a great way to add crunch to your chocolate. And, both chocolate and nuts are good for you. Dark chocolate is an antioxidant and most nuts are low in saturated fat and sodium, full of fiber, vitamin E, rich in omega-3 fatty acids. People who eat nuts regularly can lower their LDL. So, put some chocolate on some of the healthier nuts like almonds, walnuts, Brazil nuts, pecans, and cashews.

There was a time that when any special occasion came up, we’d have chocolate covered peanuts in the house. These days not so much, but I do love the combination of sweet and salty best. It’s easy enough to make your own chocolate covered nuts too by simply dipping them in melted chocolate. So I looked for a new recipe to try.
Chocolate Covered Peanut Crisp Triangles
1/3 cup firmly packed brown sugar
3 Tbsp. light corn syrup
2 Tbsp. crunchy peanut butter
2 Tbsp. butter
2 cups honey flavored multigrain cereal flakes with oat clusters
5 squares Semi Sweet Chocolate, chopped
TOPPING
1/3 cup crunchy peanut butter
1/4 cup Cocktail Peanuts, chopped
Line 13 by 9 inch pan with foil; spray with cooking spray. Set aside. Microwave brown sugar, corn syrup, 2 Tbsp. peanut butter and butter in large microwaveable bowl on high 2 min. or just until peanut butter and butter are melted and mixture is well blended, stirring after each minute. Add cereal; mix well. Press firmly into prepared pan.
Microwave chocolate and 1/3 cup peanut butter in microwaveable bowl on high 1 to 2 min. or until chocolate is completely melted when stirred, stirring after each minute. Spread over cereal layer in pan; sprinkle with peanuts.
Refrigerate 1 hour or until firm. Cut into 16 bars; cut each bar diagonally in half to make two triangles. Store in airtight container in refrigerator up to 4 days.
There is some new snow on the ground this morning and they say we’ll be having one more day of this cold weather and then we’ll warm up for the weekend where we’ll be in the 40’s and 50’s. I know I’m repeating myself but I just can help but be thankful for the mild winter we’re having.

It is good that you guys are having the mild winter and that spring is around the corner. I bet everyone there is feeling relief with it; enjoying less expensive heating bills, etc. Yum on the chocolate covered peanuts/nuts; always a favorite of mine too!
