Today is National Banana Bread Day! Banana bread is a delicious baked good, which is classified as a quick bread or tea cake. Bananas arrived in the United States in the 1870s and quickly became one of the most popular fruits on the market. It wasn’t long before they started to appear in dessert recipes as the star ingredient.
The first cookbooks that mentioned banana bread were published during the Great Depression. Culinary historians believe that a resourceful housewife who did not want to throw away over ripe bananas may have invented the original recipe.
Today there are many variations on this classic. To celebrate National Banana Bread Day, bake yourself a delicious loaf with unusual add-ins like chocolate chips, berries, or nuts!

THOUGHT FOR TODAY
Give us Lord, a bit o' sun,
A bit o' work and a bit o' fun;
Give us all in the struggle and sputter
Our daily bread and a bit o' butter.
From an inn in Lancaster, England
I make a lot of Banana Bread due to the fact that I always have some ripe bananas on hand. My very favorite recipe is the one with Chocolate Chips, but I have already shared that recipe with you so I looked for a different one to share today.
Caramelized Banana Bread with Browned Butter Glaze
4 tablespoons butter, divided
3/4 cup dark brown sugar
3 medium ripe bananas
1/2 cup buttermilk
3 tablespoons canola oil
1 or 2 teaspoons vanilla extract
2 large eggs
2 cups all purpose flour
3/4 teaspoon baking soda
1/2 teaspoon salt
1/3 cup powdered sugar
2 teaspoons milk or half and half
Preheat oven to 350. Spray a 9 by 5 inch loaf pan with nonstick cooking spray and set aside. ( I always grease and flour my pan instead)
Slice the bananas. Set aside.
Over medium high heat, melt 3 tablespoons butter. Add the bananas and brown sugar and saute for 4 minutes, stirring frequently. Remove from heat and cool for 10 minutes.
Place the banana mixture in a large bowl or the bowl of an electric stand mixer. Beat on medium speed until smooth.
Combine the buttermilk, oil, rum or extracts, and eggs in a large liquid measuring cup. Set aside. Whisk together the flour, baking soda, and salt. Beginning and ending with the flour mixture, alternately add it to the banana mixture, mixing on low speed until just combined.
Pour the batter into the prepared baking pan. Bake at 350 for 45 to 60 minutes or until golden brown on top and a pick inserted into the center comes out with moist crumbs clinging to it. Cool for 10 minutes and then remove the bread from the pan and cool completely on a wire rack.
To prepare the glaze, melt the remaining 1 tablespoon of butter in a small saucepan or skillet over medium high heat for 2 or 3 minutes or until it begins to get brown and fragrant Be sure to remove from heat as soon as it starts to get brown. Whisk in the powdered sugar and milk or half and half and drizzle over the cooled banana bread and allow the glaze to set before slicing. Makes approximately 16 slices if they are on thin side.
I’m sure to be making this recipe soon. It sounds wonderful to me. I do tend to have a sweet tooth and it shows!
We’re to be in the upper 30’s today and they say tomorrow we may get rain, but Thursday will bring the return of snow. We don’t get much of a choice on the weather, but I’m thankful for each day as it comes.
I hope you all have a TERRIFIC Tuesday !
COUNTING MY GIFTS
Looking for and enjoying beauty is a way to nourish the soul. the universe is in the habit of making beauty. There are flowers and songs, snowflakes and smiles, acts of great courage, laughter between friends, a job well done, the smell of fresh-baked bread. Beauty is everywhere.
Counting at least 3 things every day that I'm thankful for. There is truly is always something to be thankful for.

That does sound like a good recipe for banana bread. Haven't had some in a bit, but it too is a favorite of mine :)
