National Watermelon Day is always on August 3rd. This big fruit deserves it's own big day. So, we give pause to celebrate watermelons on National Watermelon Day. Sweet and tasty, watermelons, are one of summer's favorite fruit. It's standard fare at picnics. While watermelon is over 90% water, it sure tastes good.
Please don't limit your consumption of watermelon to just this month. Stores carry watermelon twelve months of the year.

Life is a slice of watermelon. Never without seeds but sweet till the bitter end.
I love watermelon but tend to have it only when I have some company to help me eat it. Every now and then the stores do offer some small ones that I can eat by myself, but they don’t seem as tasty as the big ones.
They are offered at the grocery store just about anytime of the year, but when you get a fresh home grown one that has been ripened by the summer sun, it tastes a whole lot better. I can remember the days one would be brought home and placed in a tub of ice water to get it nice and cold and then sliced up for all to enjoy.
While it's delicious on its own, there's always a way to make it even better. I found this recipe for watermelon salsa that sounds like something I’d like to try.
3 cups watermelon, cut into small dice
1 cucumber, seeded and cut into small dice
2 jalapeño peppers, minced
*I opt for a milder half hot pepper
1 small red onion, cut into small dice
1/4 cup cilantro, chopped
*I use fresh parsley instead, I have plenty of that
1/4 cup mint, chopped
Zest and juice of 2 limes
Salt and pepper
Combine the watermelon, cucumber, jalapeños, red onion, cilantro, mint, lime zest and juice in a serving dish. Season with salt just before you serve to keep the watermelon from extracting its juice.
Serve with tortilla chips
Watermelon is such a simple fruit to savor during the dog days of summer. Watermelon is not only delicious but also very nutritious.
After a hot weekend we are promised some rain for today and then it’s to cool down a bit. I’m looking forward to a week in the lower 80’s and mid 70’s.

That watermelon salsa sounds refreshing! I think we'll try it sometime this summer. Watermelon is always so tasty on a hot summer day :)

I love watermelon. My granddad grew them on his farm when I was a girl. I eat them only in summer but dearly love them.
Hope your day was blessed. I worked in the yard all morning and I am so sore I can barely get out of a chair. Oh....but the yard looks heavenly!
