It’s National Waffle Day! On this day in 1869, a man named Cornelius Swartwout received the first U.S. patent for a waffle iron. Waffles are a delightful breakfast food and can be paired with almost any topping. Butter and maple syrup, fruit and whipped cream, a big scoop of ice cream, or even a helping of fried chicken—the choice is yours!
Did you know that the first waffles originated in Ancient Greece? It’s true! The Greeks would cook flat cakes called obelios between two metal pans held over a fire. Today, all you need is a waffle iron and a yummy recipe for waffle batter.
To celebrate National Waffle Day, cook up some homemade waffles and have breakfast for dinner tonight! Enjoy!

With fall right around the corner I found a delicious waffle recipe using pumpkin. I haven’t tried it yet, but plan to do so soon.
Pumpkin Bacon Cheddar Waffles
Makes: 12
1 cup cornmeal
1 cup flour
1 teaspoon baking soda
2 teaspoons baking powder
1 teaspoon salt
3 eggs
2 cups buttermilk
1/2 cup pumpkin puree, homemade or store-bought
4 tablespoons butter, melted and cooled
3/4 cup shredded cheddar cheese, plus more for garnish
6 cooked slices of bacon, finely chopped
Topping Ideas:
Sliced peaches
Maple syrup
Fried eggs
Shredded cheese
Freshly cracked black pepper
Preheat the waffle iron. In a large mixing bowl combine the cornmeal, flour, baking soda, baking powder, and salt. Set aside.
In a smaller bowl beat the eggs, buttermilk, pumpkin puree, and melted butter and beat well. Then, fold this mixture into the dry ingredients. Stir in the cheese and chopped bacon.
Cook waffles until light golden brown according to your waffle maker’s instructions. As the waffles come off the maker let them cool slightly. Then add your topping of choice and enjoy.
As hard as I try, I cannot get myself in a mindset for fall. It just doesn’t seem possible summer will be over soon. Labor Day weekend, I will be doing some fall decorating here at my house, but I know my heart won’t be in it at all. Thankfully fall colors are so warm and welcoming that they can’t help but make you happy.
This is the week of our County Fair and I love the waffles that you find at the stands there. Maybe, with any luck at all, I’ll be able to enjoy one !

How fun with the fair, Ma! Hope you do get to enjoy a waffle :) I have never tried it, but lots of people like chicken and waffles together. Will definitely have to put that on my list of things I want to taste sometime!
