August 10th is Lazy Day and it is our chance to goof off, and definitely not work. And, it definitely comes at a good time. Hot, muggy weather makes it easy to kick back and be lazy for a day. If summer chores are not done by now, they can just wait one more day. It is best spent on a hammock, along with your favorite summer beverage.
It’s said that, there's no lazy days...just lazy people, But today is proof positive. It is indeed a Lazy Day. And, I for one consider that a good thing.

We all need a lazy day now and then and we should not feel guilty for taking some time off just to rest a little and enjoy life. We all need a little ‘me’ time now and then. I will be honest and say I’ve probably been the laziest I’ve ever been this summer and I’m not feeling the least bit bad about it either.
I know it’s only Monday and maybe you had your lazy day on Sunday but there are many benefits to being lazy and here are just a few
If you took a nap, you strengthened memories and reduced inflammation and stress.
If you listened to music on your lazy day, you decreased anxiety.
If you ate ice cream, you strengthened bones and teeth. When you tucked into that ice cream, you got a serving of calcium, protein, and vitamins A, D and K. Regular calcium consumption has been proven to ward off osteoporosis.
If you caught up on your favorite comedies, you relaxed your entire body. Laughter has been shown to relieve tension, reduce stress and relax muscles.
If you called a friend, you might have lengthened your life. Studies show good friends are good for your life.
I get lazy when it comes to cooking these days too. I never turn the oven on but do use my crock pot. Here’s an easy recipe for a Lazy Day
Crock Pot Stuffed Bell Peppers
6 large bell peppers
1 lb ground beef or sausage
1/2 cup chopped onion
1 14 oz can diced tomatoes, divided
1 8 oz can tomato sauce
1 cup long grain rice
2 tbsp Worcestershire sauce
2/3 tsp dried basil or dried oregano, optional
1 tsp salt
1 tsp pepper
1 cup shredded cheese, also optional
1/4 cup water
Cut tops off of bell peppers, saving the tops. Scrape out membranes and seeds.
Mix meat, onion, about 3/4 of the tomatoes, rice, Worcestershire, basil or oregano, and half of the cheese.
Spoon meat mixture into the bell peppers, filling to the top.
Place peppers in the slow cooker, standing up.
Pour water into the bottom of the slow cooker, to keep the peppers moist.
Dump the rest of the tomatoes on top of the peppers.
Cover and cook on high 4 to 5 hours or on low 7 to 8 hours, or until rice and meat are cooked thoroughly.
20 minutes before serving, sprinkle remaining 1/2 cup cheese on top of meat mixture.
Simply put it on in the morning and it’ll be ready for dinner.

Yum on those stuffed peppers, Ma; definitely going to make them in the crock pot. I do agree it is good to have lazy days now and then :) I took a couple days off of work a week or so ago and basically just was lazy on them; good restful time and refreshed me for when I went back to work :)

If only I could get my darling husband to realize that is okay to take 'easy days.' He works way too hard.
