Around the globe, October 16th is known as World Food Day. This humanitarian holiday is designed to increase awareness and foster education of worldwide poverty and hunger.
Many philanthropic agencies promote food donations on this date. For example, food pantries may solicit gifts of canned goods and other nonperishable food items to restock their shelves on World Food Day.
There is hunger for ordinary bread, and there is hunger for love, for kindness, for thoughtfulness; and this is the great poverty that makes people suffer so much.

I don't think there should ever be hungry people. We have so much food that if we all shared just a little there would be more than enough for everyone.
I've always been blessed with what has been needed and I try to share with others as much as I can. Still I see a lot of waste going on here at my house. There are times I throw away enough to feed a family for a day. The bread gets stale and the lettuce gets soggy. It's hard to cook for one person. No matter how much I try to conserve I haven't yet found a successful balance in buying, keeping and storing just enough. Even though I try to cook something that will make at least 3 meals and that way I can heat up the leftovers and have them again, I still seem to waste food.
When you give something away, it always comes back in one way or another. Being able to share even the simplest of things makes a huge difference. Hopefully we can all find a way to share our own abundance with others.
The pictures today are of an easy casserole to make layering burgers, potatoes, green beans and cheese. It's very quick and easy and good too! Just brown the patties, slice your potatoes and layer with green beans and cheese. Bake until the potatoes are tender and the cheese is melted

Very Good!
I'm definitely trying that recipe, Ma. It looks delicious! It is hard not to waste food; I often find the same thing with lettuce getting soggy. Not sure if any agency I know around here was collecting donations today, but at an event last week they were encouraging people to bring peanut butter for the food banks.

I always love the thoughts and quote of Mother Teresa. Such a smart woman and so compassionate. I always love your thoughts which you share with us Pam. I can especially join in with you re food waste. When I had a large family nothing much ever got wasted, but with only two of us it is harder to get it all used up before it goes off. Why are smaller quantities more expensive than larger ones? It doesn't make sense does it! Your casserole looks delicious and quite thrifty! Have a great Thursday! xxoo
