Make Your Dream Come True Day gives you the opportunity to do something to realize your goals and dreams. Whatever your dreams are, they usually don't come true without some effort on your part. So, today is the perfect opportunity to do something about it.

On this day do something, anything, to move in the direction of achieving your dreams. Sure, sometimes it takes several steps to accomplish them. So view today as a time to get started on them. With a little effort, they will come true!

NEW IN THE KITCHEN

Both melba toast and the dessert peach melba were invented by the chef of the world renowned Savoy Hotel in London in the late nineteenth century to honor Australian opera singer Dame Nellie Melba. Peach melba is a refreshing dish of vanilla ice cream topped with peach and raspberry sauce and a little sugar. Give it a try; it's National Peach Melba Day.

Escoffier's original recipe is really easy to make.

Peach halves are boiled in water for about 2 minutes. One peach per person.

Once the peaches are removed from the water it is easy to slip off their skins and remove the stone. They are then drained, sprinkled with caster sugar and left to cool

Make raspberry sauce by pushing a cup full of raspberries through a fine sieve to remove their seeds. Add caster sugar to sweeten the raspberry puree to taste.

To serve place scoops of vanilla ice cream in a dish, add two peach halves and then pour over raspberry puree.

Note: Castor or caster sugar is the name of a very fine sugar in Britain, so named because the grains are small enough to fit though a sugar "caster" or sprinkler. It is sold as superfine sugar in the United States.

My dreams have come true. I worked for years and it took me longer than I had originally planned, but I am finally retired and so enjoy my life in the Land of the Happy but Poor!

I do still have a few dreams left though and I'm working on those. I may never be finished with that job.

Today I'm hoping the weather cooperates so I can get out and do a little shopping. Other than that it looks like a great day in the neighborhood.
