On the Eighth Day of Christmas we celebrate the Holy Name of Jesus.
St. Luke tells us that, in accordance with Jewish tradition and law, eight days after his birth Jesus was circumcised and named. While a rose by any other name may smell as sweet, nevertheless, the name of the rose evokes particular memories and sensations for those who know the flower by that name. Many parents spend hours and hours thinking about the name they want to give to a child. Sometimes a child is given a name with the intention of honoring a member of the family or a friend or a hero. Sometimes a name is given simply because the parents like the sound of it. Sometimes a name is given because it signifies a meaning that will be, or the parents hope will be, manifest in the child's life: Mary and Joseph named their son Jesus because the angel told them that 'he will save his people'. Jesus, in Hebrew Joshua, means 'the Lord will save'. In English tradition, this is a day to remember godparents. Children would go to visit their godparents to receive a blessing and a gift. It is a great day to tell stories of births and beginnings.
NEW IN THE KITCHEN
Chinese Fortune Cookies are something I like to give everyone for the New Year. It's just a fun thing to do.
New Year's Day tradition at our house calls for eating certain foods which are thought to bring good luck for the upcoming year. Our favorite menu features pork because the New Year is a time to look forward and a hog cannot look back. Sauerkraut is a must and the perfect accompaniment to the pork.
Since pork has become so lean, it requires some special treatment to ensure that it does not dry out. This could be done by roasting at a constant temperature of 325° F. I prefer to start at a higher temperature of 400° F for the first 10 minutes, then reduce to 325°. This allows for a crisping of the outside of the meat. Large cuts with bones require about 20 minutes per pound. Smaller cuts and boneless roasts require 25 minutes per pound. But don't ever trust the minutes per pound method exclusively. Always start checking the internal temperature of any roast with an instant-read thermometer before it is supposed to be done. Cuts of meat and ovens can make a major difference. The internal temperature of lean pork should be about 145°, as the temperature will continue to rise as it rests. However, fattier and tougher cuts will benefit if roasted to a higher temperature, until fork tender. Insert the thermometer in the thickest part of the roast to check for doneness. Baste often with pan juices while roasting to help retain moistness.
When the roast is done, remove it from oven and place on board or platter. Tent with foil and allow to rest 10 to 20 minutes, depending on size, before carving. If desired, make your favorite gravy or sauce using the pan juices while the meat is resting.
