ON THE BRIGHT SIDE
JANUARY 27th, 2011
If you can't see the bright side of life, polish the dull side
It's THURSDAY!
Today isn't any other day, you know
Lewis Carroll
Lewis Carroll (1832–1898) was born Charles Lutwidge Dodgson on this day in Surrey, England, the son of an Anglican clergyman. To overcome stuttering, he told stories aloud to children. He taught advanced mathematics at Oxford University and was quite successful. To balance his serious career and to protect his privacy , he invented his pen name and wrote poetry and stories. His Alice's Adventures in Wonderland began as an oral story he told to friends on a boating trip. The book became an instant success.
Many decades later, Alice is still very much alive in new books, and music.

NEW IN THE KITCHEN
Today is Chocolate Cake Day
National Chocolate Cake Day is a time to salute straight-up chocolate cake; white chocolate, German chocolate, and devil's food can wait for their own Fun Food Holidays!
Say the word cake and most people will visualize a chocolate care. Chocolate cake is ethnically distance from devil's food in that it is denser and is made with real chocolate instead of cocoa.
Here is a recipe for a Simple Chocolate Cake
1 1/4 c. sugar
3/4 c. butter, softened
1 tsp. vanilla
3 eggs
2 c. all-purpose flour
1 tsp. baking soda
1/2 tsp. salt
1 c. milk
3 bars (2 oz. each) Semi-sweet chocolate baking bars, melted and cooled
Frosting
1/2 c. butter
1 bar semi-sweet baking bar
1 tsp. vanilla
1/8 tsp. salt
2-3 tbsp. milk
2 1/2 c. powdered sugar, divided
In a large mixing bowl, beat sugar, butter and vanilla. Add eggs and beat for 1 minute. Stir in melted chocolate. Combine flour, baking soda and salt. Beat in creamed mixture alternately with milk. Pour into two greased round baking pans or a 13X9-inch pan.
Bake at 350°F for 30-35 minutes or until a toothpick inserted in center comes out clean. Cool for 20 minutes on a wire rack; invert onto wire rack to cool completely.
In a small microwave safe bowl, microwave butter and baking bar on high power for 45 seconds; stir.
If needed, microwave for an additional 10-15 seconds intervals, stirring just until smooth. Cool to room temperature.
Beat 1 cup powdered sugar, vanilla and salt into chocolate mixture until creamy. Gradually beat in remaining powdered sugar alternately with milk until smooth. Frost cake.
PRAYERS
Lord, you always spoke words of encouragement to so many. It was at the heart of everything you did. It can also be at the heart of our daily journey too. If we don't start with the complete basics, we will miss the most obvious of opportunities. Lord, help me to say well done to someone who needs it the most today.
Amen
Please pray for God's protection of
our troops and HIS wisdom for their
commanders.
Lord, hold our troops in
your loving hands.
Protect them as they protect us.
Bless them and their families for the
selfless acts they perform for us
in our time of need. I ask this in the
name of Jesus, our Lord and Savior.
AND bless our Police Officers, Firefighters
and Paramedics and EMT's
GOD BLESS YOU!
AROUND HOME
Alice came to a fork in the road.
Which road do I take? she asked.
Where do you want to go? responded the Cheshire cat.
I don't know, Alice answered.
Then, said the cat, it doesn't matter
Lewis Carroll
If we don't know what it is we want, it is hard to focus on what to do.
Today wasn't to be a day for Mr. Wonderful, but I got an early morning wake up call to say he would be coming over so I'm sipping the good hot coffee here. I'll be awake by the time he arrives.
I hope your Thursday is a wonderful one too!
COUNTING THE DAYS
Begin at the beginning, the King said gravely, and go till you come to the end; then stop.
Alice's Adventures in Wonderland
52 DAYS UNTIL SPRING!
81 DAYS UNTIL CAMPING SEASON BEGINS
Keep looking ON THE BRIGHT SIDE of things.
A little smile, a word of cheer,
A bit of love from someone near…
