It's TUESDAY…
Bakers of the world, rise up and bake some bread, for today is Homemade Bread Day
People just don't have time to bake homemade bread. We turn to a quick run to bakeries and grocery stores, for our bread needs
I guess I’d rather be baking bread today than working, but that is not my option for sure. Even a nice pan of hot biscuits would be nice.
Guess I’ll be stopping at my favorite drive thru on my way to work to get mine this morning.

NEW IN THE KITCHEN
JUST IN TIME FOR THE HOLIDAYS…
A DIFFERENT KIND OF FRUITCAKE
The first recorded appearance of fruitcake dates from Roman times. Crusaders reportedly carried the long-lasting cake to snack on during their long march to the Holy Land. In the early 18th century, fruitcake (then known as plum cake) was outlawed throughout continental Europe ― it was considered sinfully rich. That didn’t stop it from becoming a staple of the Victorian tea party, but Queen Victoria herself is said to have waited a year to eat a fruitcake she received for her birthday because she felt it showed restraint, moderation and good taste. The expression nutty as a fruitcake turned up in 1935
Ingredients:
2 Cups Sugar
1 Cup Shortening
4 Eggs
Salt
1 tsp Baking Soda
½ Cup Buttermilk
3½ Cups Flour
Candy Orange Slices (11 oz bag), coarsely chopped
1 Cup Coconut
2-3 Cups Pecans (depending on how much you like pecans)
Topping:
½ Cup Orange Juice
1 Cup Powdered Sugar
½ tsp Vanilla
Directions:
Cream shortening and sugar together. Add eggs one at a time, beating well between each. Add a pinch of salt. Dissolve baking soda in buttermilk. Alternately add buttermilk mixture and flour to the mixture. Add orange slices, coconut and pecans. The batter will be stiff.
Bake in loaf or tube pan at 325 for about 1 hour and 20 minutes, then test with toothpick for doneness. Makes 2 bread pans or one large angel food or Bundt pan.
TOPPING: Mix all ingredients and pour over hot cake.
ATTIRE FOR TODAY
Even though we are starting out the morning in the 30’s it is supposed to warm up to the mid 50’s today and be partly sunny. I had thought it was supposed to do that yesterday but I don’t think we made it out of the 40’s it seemed chilly all day to me.

O God, help us to remember that you love us. Give us strength to pray when times get rough. Help us to remember that you are the good shepherd, always caring for your sheep

This is the sun coming up over the hill at the campground on an April morning.
AROUND HOME
Thankfully things are pretty quiet around here. I did hear from DS#1, DS#4 and DS#6, one right after the other on Sunday evening. I’m always happy when any of my ‘babes’ call to check in.
DS#4 said our ‘Sunshine boy’ had wanted to talk to me but he fell asleep on the couch before he got a chance. Poor little guy had had a busy day and couldn’t stay awake any longer. Hopefully, I get to talk to him soon.
Tonight is my dulcimer get together with two of my friends. We’re playing our Christmas tunes now and I just love it as they are my very favorite kind of music.

That's some fruitcake! The pecans alone would bankrupt me here in Nova Scotia! Have you baked it yet? It sounds delicious and I may have to give it a whirl! Thanks MA.
