ON THE BRIGHT SIDE

It's SATURDAY…
This was the scene when I looked out my window on Friday morning! We were blessed with our first snow of the year. It was very wet and a lot of parts of town didn’t get as much as we did, but it was beautiful and sure did add to our Christmassy feeling yesterday.
DS#5 and #6, DDIL #5 and DD and I had a great day and I managed to get several Christmas gifts and even a few baby gifts too!
Today is my day to work on making some gifts and to do a little laundry here. That part of my household chores has fallen aside the past week and I do need to do some catching up.

DS#5 and his wife were looking over the menu at the Main Street Café yesterday. Their food is really good and my favorite there is always the Rueben Sandwich. It is huge so DD and I split one. It was delicious as
always.
My kitchen is pretty quiet these days, but I do plan to make something today as I’m done with my leftovers now and need something new to eat.
Here is one of my favorite quick and easy meals:
When my children were young they like this dish and I still do.
Chicken ala King
(you can also use leftover turkey)
1-2 cups leftover chicken cubed or canned chic
ken white meat
1 can mixed vegetables drained
1 cup milk
1 stick butter
3 tablespoons flour
Salt and pepper to taste
Melt 1 stick of butter in pan, slowly stir in flour un
til it well mixed
Add milk slowly to this mixture and stir on medium heat til it thickens.
This makes a white sauce so you just thicken it to whatever consistency you like. You can add more or less as needed.
Add the leftover chicken and vegetables and cook til all is thoroughly heated through. Salt and pepper to taste.
You can serve this on biscuits or toast or flaky pastry shells. Its quick and easy for when you don’t want to spend a lot of tim
e.
I’m guessing at the measurement for the milk and flour as I usually don’t measure them out, so you may have to adjust them slightly.
ATTIRE FOR TODAY
Here is DS #5 outside the Army/Navy Store yesterday. We always look in there as you just never know what you might find.
It will be in the up 40’s they say and maybe party sunny but I think a coat will be needed for sure.

AROUND HOME
I sure had a lot of fun with these guys yesterday. Today I’ll be a busy bee at home so even though I’ll miss them and all the rest of my babes too. It’ll be good just to have the day to myself.
DD did asked me for dinner, but I think I’ll just stay home and get some things done…her hubby makes some wonderful meat pies and beans and rice and that is what they are having tonight.

Ma, I keep meaning to tell you that I just love this new format you are writing on here. I really enjoy reading about all the goings on in your life and seeing all the pictures. How wonderful that you have some snow! I am dreaming of a white Christmas, no pun intended, but I do that every year over here. There is not even the remotest chance of us ever having one, but one can dream!! Thanks so much for your cheery comments each day at Oak Cottage.
