It's THURSDAY…
One week from today is the official Thanksgiving Day and then we’ll kick off the Christmas season. I think I’m running out of Thanksgiving pictures for you all anyway.
Thankfully my camera still works so I’ll be taking more along the way. Only 2 more days til our Family Feast. I’m as ready for that as I can be.

NEW IN THE KITCHEN
DS#6 and his wife are the King and Queen of Mashed Potatoes here at my house. Here they are a few years ago pealing and cutting up potatoes for Thanksgiving Dinner.
Mashed potatoes certainly aren’t new, but they are an old time favorite of a lot of us. I did find a recipe for make ahead mashed potatoes so I’ll share that with you all today
This recipe is especially great when serving a crowd
15 medium (5 pounds) potatoes, peeled and quartered
1/3 cup chopped chives optional
Spray a large casserole dish or crock pot dish (if desired) with vegetable-oil cooking spray.
In a large pot of boiling water over medium-high heat, cook potatoes until tender when pierced with a fork; remove from heat and drain.
In the same cooking pan, mash potatoes with a potato masher, potato ricer, fork, or beat with electric hand mixer, mash potatoes until there are no lumps. NOTE: NEVER use a blender or food processor to make mashed potatoes (see below).
Add cream cheese, sour cream, onion powder, salt, pepper, egg whites, and chopped chives (if desired); blend well. Dot with butter.
Cool mashed potatoes slightly, cover, and then refrigerate
Preheat oven to 350 degrees F.
Take potatoes out of the refrigerator 30 minutes before baking.
Bake, loosely covered, 40 minutes or until steaming hot in center. Remove from oven and serve immediately
Crock-pot Variation: Cooking the prepared mashed potatoes in the crock-pot is a great way to keep the oven freed up for the other dishes. Take the prepared mashed potatoes out of refrigerator about 3-1/2 hours before serving time. Place in crock-pot. Cover and cook on low heat for approximately 3 hours, stirring once or twice. After potatoes are cooked, stir, and then add some additional dollops of butter just before serving.
Leftovers: If you have any leftover mashed potatoes, place them in a resealable plastic bag and freeze

It’s supposed to be a rainy day today so I’ll be doing my best to make my own sunshine once more. At least it will still be in the 50’s.

AROUND HOME
DD looks like she is ready for some football with her jersey on there.
I’m ready for a vacation day or two. During the summer I had a lot of Fridays off so that I’d have long weekends for camping and I’ve not had a day off in well over a month now. Next week I’ll only have to work 3 days with 2 off so it’ll be really nice to have a 4 day weekend once again.
Tonight is our book club night at church. I wasn’t crazy about the book so I won’t even tell you what it was. I’ll be interested to see if anyone else liked it. Wonder what will be next?

You have a beautiful family! I loved the picture of the punks on the sofa. I have eight grandchildren so my hats off to you with eleven. I hold Camp Grandma here on the Ozarks Ponderosa several times a year and let me tell you, its a riot and a half.
