I’m not a very daring person but I do live a wonderful life and usually do what I want. I think life is an adventure to be lived the best we can. To spend time with loved ones is one of my most wonderful things to do and today I should be getting the chance as DS#5 is coming’ over to mow my lawn, and will probably bring our cutie Patootie with him. He says she loves to help. I wouldn’t mind if the whole family came along. I could fix a picnic lunch and sit out on the porch awhile.
I usually like to do the yard work myself, but I’ve had some trouble with my blood pressure lately and until I get that worked out and in control, he has volunteered to help me out. With his long legs, I’m sure he’ll get it done in double the time it would take me.anyway. Most of my yard is in the shade this time of year so it won’t seem as hot as it would if, it were in full sun.
It’s mid week and all my leftovers are long gone so for today I made up some tuna salad to have. It’s a cold meal for a hot day and good for us too.
Tuna Salad Sandwiches
2 cans tuna in water, drained
1/2 c. chopped celery
1/4 c.chopped onion
1/2 c. mayonaiase or salad dressing
1 tsp lemon juice
1/4 tsp salt.
1/4 tsp pepper
8 slices bread
In a medium bowl, mix the tuna, celery, onion, mayonnaise, lemon juice, salt and pepper.
Spread tuna mixture on 4 bread slices. Top with remaining bread slices.
You could also stuff tuna in hollowed out tomatoes or avocado halves for a fresh take on lunch. Some people also like to add a slice of cheese on top of the tuna and grill like a grilled cheese sandwich for a tuna melt sandwich.
I’ll be making mine on plain bread today, too hot for grilling and serve with some chips and jello salad. Keeping things cool on a hot day.
This recipe takes just a couple of minutes to make is the fastest easiest recipes you’ll ever make
Cottage Cheese and Jello Salad
1 pkg jello, any flavor
1 15 oz can crushed pineapple, drained
1 16 oz. container cottage cheese
1 8oz container cool whip, thawed
Combine cottage cheese pineapple and gelatin in a bowl, stirring well. Fold in Cool Whip until well combined. Try not to over mix and deflate Cool Whip. Transfer to a clean serving bowl and cover and refrigerate one hour before serving.
I love cottage cheese any way and usually have some on hand. Very cooling and delicious!

Great pictures of your family enjoying the hot air balloons! Sorry to hear about your issues with blood pressure, Ma; hope that gets controlled quickly. Glad your son can help out with the yard work. A picnic outside would be a lovely thing I think!

I'm sorry to hear about your BP issues, but glad to hear you're staying on top of it. What a super gesture by DS #5! Thank you for sharing this cottage cheese/jello salad! Pretty sure that's what my DIL prepared for something or another last year and I remember eating more than my share. (LOL)
