Today is National Lollipop Day which is a special treat that comes in a variety of different shapes and sizes and flavors. You can make traditional hard candy lollipops with just four simple ingredients - sugar, water, corn syrup and the flavoring of your choice.
Culinary historians believe that the lollipop. or at least some form of it, has been around since the prehistoric era. It is presumed that humans often enjoyed honey on a stick as a delicious treat. No one knows for certain how the modern day lollipop was invented. However, we do know how the lollipop got its name. George Smith the owner of a small American candy store came up with the sweets name in the early 1900’s. He coined the sweet confection a lollipop after his favorite race horse — Lolly Pop.

Enjoying anything sweet is now a thing of the past for me, although I do treat myself at least once a week. I figure it can’t hurt when done in moderation. Having recently found out I not only had high blood pressure but high blood sugar as well as thrown me for a loop. There is no denying I was a sucker for anything sweet before this diagnosis. I’m sorry if I’m dwelling on this subject far too much, but it is upmost in my mind. I’ve always loved to cook a lot and eat what I make. I’m a fan of good food, but not every thing we eat is good for us. Moderation in all things is best. I’m slowly but surely realizing that portion size is a big part of eating healthy.
Having no leftovers here from the weekend, I’ve decided to make up a long grain rice casserole for the beginning of the week. Most whole grains are good for us as long as we keep them in proportion.
DUMP AND BAKE CHICKEN BROCOLLI RICE CASSEROLE
MAKES 4 SEERVINGS
1 Can condensed cream of chicken soup, not diluted
3/4 c. water
1 c. whole grain rice
1 lb. uncooked chicken brast, diced
about 2 c. brocolli florets
Optional topping, 1/2 c. grated cheddar chesse
Preheat oven to 375 degrees. Spray a 9 by 13 inch baking dish with cooking spray. Add cream of chicken soup and water to prepared dish. Whisk together until combined. Stir in uncooked rice, chicken, and broccoli . Season to taste. Stir again.
Cover tightly with foil and bake for 1 hour or until liquid is absorbed, the rice is tender, and the chicken is cooked through. If desired sprinkle the top of casserole with grated cheese and return to the oven for a few minutes until cheese is melted.
I cut the ingredients in half and baked in an 8 inch square pan.
This along with a wedge of cantaloupe will make a perfect dinner for me for a couple of days

I'm glad you are being careful about your diet. I'm not much of a sweets person but my hubby has to have something sweet every day. Have a great week!
I've a sneaking feeling I'm going to have to start emulating you, Ma. 'Just got the results of my blood work back and the cholesterol's not good. That, coupled with some angina pains prompted me to schedule that Heart Awareness Scan ... would you believe, they have no availabilities until the end of August! I don't crave sweets so often, but really struggle with portion control.
ANYway, I'm glad to hear you're allowing yourself a little treat every now and then!
I like sweets but usually forego them because of their calories. You are doing good Ma in realizing you have to eat healthier now. A lot of people would just keep their old habits so it is good you are making new habits!
I discontinued hard sugar candies long ago, in favor of delicious chocolate. It was a wise choice.
