It’s a day to celebrate the amusing icons that make us smile. They say the face with tears of joy is one of the most popular emotion cons. The classic red heart emoji comes in a close second.

My favorite emoji is the I love you one 😘 I usually end any text with friends or family with one. The happy face would come next on my list 😊 Hearing from any of my family or friends always makes me happy. 🥰
It turns out I didn’t get my whole wheat pasta in my grocery order so yesterday’s recipe turned into some creamed spinach instead. And since I have a lot of spinach to use up I looked for and found another good recipe. This time it’s for breakfast and not dinner.
Spinach and Egg Muffin Cups
2 tbsp. olive oil
1 c. red pepper, chopped
1 c. green pepper chopped
1 c. onion,chopped
2 c. baby spinach, roughly chopped
1 c. mushrooms chopped
2 cloves garlic, minced
salt to taste
4 whole eggs
4 egg whites
hot sauce, optional for drizzling on top
Preheat oven to 350 degrees. Grease a 12 slot muffin pan with cooking spray and set aside. Heat a large skillet over medium heat. Add in oil, red pepper, green pepper and onion. Sauce 5 to 7 minutes until peppers are tender.
Add in spinach and mushrooms and cook an additional 2 minutes. Add in salt if desired and minced garlic. Remove from heat.
Crack eggs/egg whites into a large 4 c. measuring cup and whisk together. Stir in cooked veggies.Pour the egg/veggie mixture evenly into prepared muffin pan. Bake 15 to 20 minutes, or until tops are firm to the touch and eggs are cooked.
Cool slightly and serve immediately. Leftovers can be stored in an airtight container in the fridge for about 4 days. They may be also frozen. To reheat pop them in the microwave until warm, about 10 seconds.
This week has been another fast one. Strange that being I’ve really not done much at all. I’ve spent more time than not seeking recipes for dinner. I’m trying really hard to maintain a healthier diet. I really haven’t had any sweets to speak of unless you count grapes and salt is now out of my diet all together. Today’s lunch will be some cottage cheese, apple sauce and a plain burger, no bun..
Enough said about that. Yesterday, I went to the farm market down the road from me and that is what today’s pictures are of.😊
I love that we finally have fresh fruit and veggies available and that it’s not far away!🥰

It's time for some good eating when summer comes!
Glad you went out to the farmer's market, Ma. The veggies look delicious! I love spinach. I could eat it raw with a little lite salad dressing on it. I know its not fun to have to eat healthy, but it is good for our bodies. Allow yourself a little treat now and then. That won't hurt you in the long run if it is infrequent and a small portion.

I was probably slower than most discovering/using emojis, but now I love them. So much creativity to choose from at our fingertips!
I love everything about this recipe! Well, except turning on the oven. LOL. 'Just another reason to consider investing in one of those counter-top models.
I make a batch of breakfast muffins at least once a month. They freeze well and make such a quick and easy breakfast!
