Today is National Corn Fritters Day which are savory bits of fried or baked corn batter, a mixture made with corn, egg, milk, flour and melted butter. These treats can be eaten alone, served as a side, or enjoyed with a topping like syrup, powdered sugar, or jam.
Although corn fritters originated in the South, many cultures enjoy similar dishes. For example in Asia, Pakoras are popular snack. This dish is made with vegetables dipped in bater then deep fried.
To celebrate today grab your frying pan to cook up some homemade fritters!

The recipe for today is made with whole wheat flour instead of all purpose and is served with a yogurt dip instead of smothering with butter and syrup, so is considered a little bit healthier than the usual.
Corn Fritters
For the fritters:
3 c. corn kernels, fresh frozen or canned
1 c. whole wheat flour
1/2 c. chopped red or green pepper
1/4 c. finely chopped cilantro
1/4 c. finely chopped green onion
1/2 jalapeno, finely chopped, optional
2 tsp honey
2 tsp. minced garlic
1/2 tsp paprika
1/2 tsp salt, optional
a couple pinches black pepper
2 eggs, beaten
2 tbsp. olive oil for frying
For the dip:
1/2 c. plain Greek yogurt
3 tbsp. olive oil
1 tbsp. honey
1 tsp. minced garlic
2 tsp. apple cider vinegar
juice from 1 lime
1/2 jalapeno, diced or more if you want more heat
salt to taste
Make the yogurt dip: whisk all sauce ingredients together except for salt. Taste then add to your taste. Cover and refrigerate until ready to serve.
Make the fritters: Mix all fritter ingredients together in a large bowl. Heat the oil in a skillet over medium high heat. Once hot use a large spoon and scoop 3 tablespoons of fritter mixture . Place into hot skillet and form into a circle as best you can. Repeat with a few more, making sure not to overcrowd the skillet. Cook until golden brown, about 2 or 3 minutes on each side. Transfer to a paper towel lined plate until finished.
Serve warm with yogurt dip.
I’m not a fan of anything too hot so I leave out the jalapeño. but some like it hot so it’s your choice.
When I get some fresh corn at the farm market, I will be making good use of it. It just won’t be covered in butter and salt like I used to. Added salt is no longer a part of my diet. DS#4 says he misses our Ohio corn as his in Florida is just not as tender and crisp. It’s the only advantage I’ve heard of Ohio over Florida since he moved there.

ADVICE FOR TODAY
July is hollyhocks and hammocks, fireworks and vacations, hot and steamy weather, cool and refreshing swims, beach picnics and vegetables all out of the garden- first sweet corn on the cob dripping with butter, first tomatoes dead ripe and sun warm, string beans, squash, crisp cucumbers. July can also be hard and shiny, brassy and sharp. Some days are like copper pennies in the sunlight.

Corn on the cob is one of my favorite things in the summer. Those corn fritters look so delicious. I haven't made them in years. I need to remember to make some this summer for sure. Have a great day!
I love corn ... but don't recall ever having had a fritter. 'Will be checking with Tom to see if he'd like me to make these. Even if he says, "no" I'm going to save this recipe for the healthy yogurt dip. What's that they say, "Bon appetit!"
Mom always made corn fritters when hay baling happened. There about 6 young sweaty farm boys sitting at her table eating like there was no tomorrow. She already had made bowls full of the fritters. There were never leftovers.
I miss fresh corn.
Dean is growing corn in his garden! It's not ready yet but I am already looking forward to it!
