Today is World Hepatitis Day which is a day to raise awareness of hepatitis B and C and to encourage prevention, diagnosis and treatment. Approximately 1 in 12 prsons world wide is living with either one or the other form of hepatitis. If left untreated and unmanaged hepetitis B or C can lead to advanced liver scarring and other complications like liver cancer or liver failure.
About a third of the world population has been infected at one point in their lives. The disease has caused epidemics in parts of Asia and Africa and is endemic in China.
Be aware and get diagnosed and treatment if necessary.

It seems that Covoid 19 is not the only epidemic around. There are lots of other diasseas out there to be aware of. The important thing is that we are diagnosed and get treatment to stop it in its tracks. Our health is our wealth. It’s important to get check ups and make sure we’re all right. Some diseases are asymptomatic and we don’t even know we have them until its too late. A once a year check up is vital to keeping us in good health. I wasn’t always good at that at all, but found out just haw important it is when my blood pressure reached abnormal levels.
Eating healthy has become a way of life for me but it’s not easy to find good recipes. Today I’m making some Cabbage and Keilbassa. Normaly I’d make it Keilbassa and fried cabbage with noodles in bacon grease, but today I’m making a healthier version.
Cabbage and Keibassa Skillet
Makes 6 servings
1 tbsp. extremely virgin olive oil
2 lbs. cooked Keilbassa cut in half lengthwise then cut into 2 inch pieces.
1 small head of cabbage, core removed , coarsely chopped
1 onion, cut into large pieces
3 cloves garlic, minced
3 tsp. sugar, optional
1/2 tsp salt
1/2 tsp black pepper
2 tsp vinegar
1 1/2 tsp dijon or brown mustard
Heat olive oil in large nonstick skillet over medium heat and add kielbasa. Cook without stirring for 1 minute then stir occasionally for about 3 minutes. Transfer to a plate with a slotted spoon. In the same pan with some of the kielbasa drippings, add the cabbage, onion, garlic, sugar salt, and pepper. Stir to combine and cook about 5 minute or more depending on how tender you like your cabbage. stirring occasionally.
Mix in the vinegar and mustard add the keibasa back to the pan and cook for another 2 minutes to heat through. Taste and adjust seasonings if necessary. Serve immediately and enjoy.
I’ll put the lid on the skillet if I want to get my cabbage nice and tender and steam it for awhile. I’ll also leave out the added sugar and salt. A fresh head of cabbage from the farmers market really makes a difference in taste. I’ll serve this with a side of applesauce to balance out the vinegar and mustard. There seems to be a way to still make the same dishes I love, only a bit healthier. Leaving out the potatoes and noodles in the dish is a better choice I’m making too.

That recipe looks great Ma! Healthier too! So true there are other illnesses and diseases out there. I think we tend to forget that with so much talk about Covid 19. Now I hear talk about the vaccine trials are going really well. Not sure I'm ready to take that particular vaccine yet without more investigating into it.

I'm thankful that I came to love good healthy food. There is nothing better to me than fresh fruits and veggies. That watermelon looks so good!
Those Hepatitis statistics are sobering, indeed. My former husband contracted it years ago just from sharing his bottle of Maalox with an employee. When I worked at the hotel, each year the company provided complimentary vaccinations for maids and house persons most at risk. Enjoy that Kielbasa and cabbage ... I can almost smell the wonderful aroma!
I have always eaten afairly healthy diet but more so as I have grown older!
Your food always looks so good. I could eat a whole half of a watermelon right now!!!
I suppose there will be a Covid vaccine soon. I got a shingles vaccine - two of them - and flu vaccine. It scares me to think of Covid....
