Today is National Sugar Cookie Day which celebrates a simple but totally delicious treat. Tradiational sugar cookie recipes call for just 6 ingredients, sugar, flour, butter, eggs, vanilla and baking powder.
Although sugar cookies are sometimes thought of as plain there is more than meets the eye. Use cookie cutters to create shaped sugar cookies and top them with frosting or sprinkles. You can make cookie sandwiches with two sugar cookies and fillings like marshmallow, melted chocolate, or jam.
To celebrate bake some sugar cookies today or support your local bakery. Keep them to yourself or share with friends and family.
If you can’t see the bright side, polish the dull side

It’s been too hot to bake anything here so I ordered some sugar cookies from the store I figure I can use a treat now and then with my coffee. I found a recipe for Sugar Cookie Fruit pizzas that sounded good for a summertime treat so I’m sharing that today
Sugar Cookie Fruit Pizzas
1 pkg. sugar cookies
Cream Cheese frosting;
5 tbsp. butter, softened
8 oz. rem cheese softened
2 c. powdered suar
1/2 tsp vanilla
fresh fruit, assorted
In a bowl of electric mixer, cream butter and blend in cream cheese and mix until smooth. Add powdered sugar and vanilla and mix until light and fluffy.
Top sugar cookies with cream cheese frosting and decorate with fresh fruit such as diced strawberries, raspberries, pineapple, peaches , blue berries and diced kiwi Keep refrigerated until served.
You could bake your own sugar cookies to do this, but I used the prepackaged ones. Anything easy peasy is my favorite these days.
I’m just a little nervous today as this afternoon is my doctors appointment. This is a new doctor to me as my old one retired several years ago now and I had to find a new one. My blood pressure has been up there in numbers and that’s something I can no longer ignore. Hopefully all it will take is a few pills and I’ll be good as new .
I have no pictures today of cookies so the ones I added are from a get together last summer at an Amish style restaurant with the family

Sugar cookies can't be beat! However, I have to admit I always enjoyed the raw dough more than baked. LOL. Never thought about making a cookie sandwich with jam ... ummmm!
