Today is Fresh Spinach Day which reminds us people should eat more fresh spinach. The most famous spinach fan was Popeye, the sailor who got all his strength from tin spinach but fresh is best and should be integrated to everyone’s food.
It’s a very healthy vegetable. It has low calories but a lot of vitamins. Most importantly spinach offers iron and should be combined with Vitamin C, which is included by oranges and tomatoes. Fresh Spinach Day gives a good occasion to give this vegetable another chance. It tastes different if it is fresh and has nothing to do with the green pappy dish so many do not like.
If you can’t see the bright side, polish the dull side

Popeye the Sailor Man
The picture above is of me out on my bike earlier this week when it was cool enough to enjoy being outdoors. I love fresh spinach and try to eat it often. I use it like lettuce on sandwiches and salads. It’s good mixed in eggs and casseroles too. I found a heart healthy meal to fix for dinner tonight using spinach. Hope you’ll try it.
Garlic Butter Pasta with Spinach
Serves 4
8 oz. shoe wheat pasta, your choice
4 Tbsp butter
1 tsp. minced garlic
8 oz. fresh baby spinach
1 tsp. basil
Salt and pepper to taste
2 oz cream cheese, room temperature
1/4 c. milk
Prepare pasta following package directions. Melt butter over medium heat in a large skillet . Add garlic and stir to cook until fragrant, about 30 seconds.
Add spinach and seasonings, then cook until spinach is wilted. Drain cooked pasta and add to spinach mixture. Add cream cheese and milk. Mix and stir everything until well incorporated and cream cheese is melted. Top with Parmesan cheese and serve.
I’ve replaced all my regular pasta with whole wheat and given the other away. It’s the only way I can eat pasta these days. Although I’d never been a fan of it before, it’s better than nothing and that is what I was faced with. Eating and cooking healthy isn’t as much fun as it used to be but I’m doing what I can, to get the numbers down. I also have to limit my servings to about 1 cup instead of plate full like I used to.
I’ll also be having some baked fish fillets along with the pasta for dinner tonite. Whole grains, protein and nuts are important part of my new diet.

Embarrassed to admit, I didn't realize there was such a thing as whole wheat pasta. Wonder if Tom will notice if I substitute that next time. LOL. I agree, it's crazy the things we long for once someone says "nope." It's been almost 7 years since I quit smoking, but there are days I still really, really long for a cigarette. Have a great day!
I have even seen pasta out there made of veggies. Wonder how healthy that would be. That spinach recipe looks scrumptious! Going to try it for sure! Getting out and exercising is always good for your numbers too Ma!

We do what we can to stay healthy for as long as we can! Louis Dean mentioned just the other day how much easier it is to eat healthy than it used to be. I guess we get used to it and it becomes our norm.
