Today is a HAPPY ANNIVERSARY TO DD and her hubby!
An anniversary is a time to celebrate the joys of today, the memories of yesterday and the hopes of tomorrow!
May the dear Lord bless you both today and always !
Today is also Pecan Pie Day which is a day to indulge in the sweet delight that has the best of both worlds - a smooth filling and crunchy top. Traditional recipes for pecan pie call for ingredients like roasted pecans, butter, eggs and brown sugar, but there are many variations. Some people even choose to add special ingredients like chocolate or bourbon.
Most Americans consider pecan pie to be a Southern specialty, but this type of pie is actually French in origin. French immigrants living in New Orleans baked the first American pecan pies. Many years later the Karo company popularized this dessert with recipes that called for the company’s corn syrup.
Today’s a great day to support your local bakery and get a pecan pie for dessert. Serve with a dollop of whipped cream and enjoy!

We don’t have any family birthdays in July but this is the 2nd of our July anniversaries. DD and her hubby live close by as in the same town, so I get to see them often. They’ve been a big help to me ever since the corona virus began by doing my shopping and delivering it to my house regularly. They and DS#5 are the only two of my family that live here in our hometown and the only two that have a July Anniversary. As I did with DS#5 and his wife I offered my baby sitting services , but their son was already spending the day with DS#5 and family so they didn’t need my help but the offer is still there any time they need it.
DD said they are off to trip to Amish Country to celebrate and I hope they enjoy it. We may have chances of rain, but hopefully they miss them. There will be a lot to see there and I’m hoping it’s not to overcrowded and people keep their safe distance and their masks on. It’s a requirement now for our county but I’m not so sure how it is there.
Lots of tourists visit our Amish Country in mid Ohio every year and busses full of them come in to see what is offered. I know from post trips there is every sort of furniture and crafts there. Things that aren’t offered other places and the Amish are all known for there good craftsmanship.
I do love pecan pie but I’ve had to reduce the sugar in my life so I looked for a healthier version that I could enjoy and here it is:
Pecan Pie without Corn Syrup
1/2 c. honey
2 tbsp. coconut oil, melted
3 eggs
1/2 tsp orange zest
1/8 tsp salt
1 tbsp. unsweetened almond milk
1 tsp. cinnamon
1 tsp vanilla
3 tbsp. whole wheat pastry flour
2 cups pecans
1 bottom pie crust
Preheat oven to 400 degrees. In large bowl, combine honey, coconut oil, eggs, orange zest, salt, unsweetened almond milk, cinnamon, vanilla and whole wheat pastry flour. Stir to combine
Arrange the pecans into prepared 9 inch pie crust. Pour the ligud filling over the pecans.Spreading as necessary.
Place in oven and bake for 10 minutes at 400 degrees, then reduce temperature to 350 degrees and bake for about 25 minutes. The pie will rise in the oven. You’ll know when it has small cracks in the top and is no longer giggly.
Remove and cool before serving., Preferably overnight.
Note: honey is still a form of sugar, but since is a natural resource I figure it’s better than regular granulated sugar or karo corn syrup.
Pecans are good for you but all the sugar is not so hopefully this tastes just as good as the sugary one. I’ve not made this before but I’ll find out.
If you have any sugar free or low sodium recipes you’d like to share it would be a great help to me as I adust to this healthier way of eating. Finding out I have both high blood pressure and high sugar count has me rethinking a new way to eat.

Happy Anniversary to your DD and hubby! I envious of their outing to the Amish ... yet unwilling to make that drive. (*smile*) Pecan pie used to be my very favorite, and mother made the best. I'm just sick to have lost her recipe and haven't been able to find another that called for both light and dark Karo -- and coconut flakes, too. Oh well, it's probably healthier that I don't. Happy Sunday!

Happy anniversary to your daughter and SIL! Sounds like a fun day they have planned for their trip to the Amish! I didn't know that about pecan pies coming from the French. Learned something new today!
