Today is National Milk Chocolate Day which is a day for chocoholics to unite! Milk chocolate is a mix of cocoa solids and either dry or condensed milk. While dark chocolate is traditionally used as a baking ingredient, this light version is used to make chocolate candy bars, hot chocolate and many other delicious desserts.
Chocolate atually has mood enhancing benefits. That’s right — chocolate can make you happy . The is due to the fact that it contains a stimulant called theobromine called anadaminde. Now that’s a reason to celebrate!

They do say a little chocolate is good for us, but mostly it’s dark chocolate not milk chocolate. But then, who doesn’t want to feel happy? If only it was as easy as having a piece of chocolate candy.
Most of the time its hard to stop at just one piece. But I’m learning. Today I looked for and found a healthier dessert to make with chocolate.
These no bake cookies were made healthier by cutting back on the butter and added chocolate chips.
No Bake Chocolate Peanut Butter Drops
1 c. sugar
1/3 c. butter
1/4 c. unsweetened cocoa
1/4 c. 2 % milk
1/4 c. chocolate chips
1/4 c. creamy peanut butter
1 tsp. vanilla
1 1/2 c. oats
Combine first 4 ingredients in a medium sauce pan. Bring to a simmer over medium heat. stirring frequently. Cook until sugar disovlves. stirring gently. Remove from heat, add chocolate chips. Let stand 1 minute. Stir with a whisk until chips are melted. Add peanut butter and vanilla: stir well,. Stir in oats. Cool slightly.
Drop mixture by tablespoonfuls onto waxed paper cool 15 minutes or until firm.
Makes approximately 30 cookies
This is the last day of our hot hot weather for the week. From now on it’ll be cooler and temps go back into the lower 80’s. What a relief, I’ll be able to get outside again. There is no doubt I need to get my exercise. Thankfully I do have the perfect place to do it in. Taking a walk or going for a bike on our quiet streets is safe and easy. We get very little traffic here and although we have no sidewalks, walking on the street is no problem. There is rarely anyone else out there and I mostly have the place to myself. I’ve never lived in a quieter neighborhood.
All you need is love, but a little chocolate now and then doesn’t hurt.

COUNTING MY GIFTS
I’m grateful for every day I’m still alive. Everything is still working I attribute it to eating a lot of precessed foods. I think it’s the preservatives that keep me going. That and I eat as much chocolate can I can get my hands on.

Good that you live in such a quiet neighborhood Ma! I love chocolate! It is hard to stop with just 1 piece though especially the Hershey kisses.

I think few things define 'yummy' more so than chocolate and peanut butter! We keep a little bowl of Hershey's Kisses on the table by our front door. More than a few big 'little kids' have dipped before leaving. :)
