Today is Fool’s Paradise Day which is day for the mind. If real life is wrecked up and everything might go wrong, the message is to close your eyes and dream yourself into another world. Paradise is a imagined place where no pain, work, sorrow or worries exist. On Fools Paradise Day its a good time to visit this perfect place and forget about the troubles in real life.
Escaping from reality or fading out ones troubles needs a little foolishness, but it’s not foolish to close you eyes and create you own paradise you can visit when ever you need a break.
If you can’t see the bright side, polish the dull side

Whenever I need a break, I always do an imaginary trip to beach. It’s my favorite place to be and that is what today’s pictures are my latest trip to the beach as Christmas this past yeer. I can close my eyes and think about what a good time we had gathered togather as a family. That’s my happy place and my idea of paradise.
Of course the real paradise is when we all meet up in heaven. There is the guarantee that someday we’ll be together again.
I guess I was living in a fools paradise when I was eating what and when I wanted having no concern about my health. Now it’s time for me to come back to reality and I found a new recipe for a delicious dinner tonight.
Pear and Walnut Salad
Makes 4 servings
1/2 c. walnuts
1 tsp apple pie spice
2 tbsp lemon juice
1 tbsp. Olive oil
1/2 tsp salt, optional
1/4 tsp pepper
2 stalks celery
1 Bartlett pear
1 scallion, thinly sliced
2 bunches of arugula, stems discard
On a baking sheet, toss 1/2 c. walnuts with 1 tsp. apple pie spice and roast at 400 degrees until fragrant, about 10 minutes and roughly chop.
In large bowl, whisk together 2 tbsp lemon juice with olive oil, salt and pepper to taste.
Ad 2 stalks of celery, 1 bartlett pear, and 1 scallion all thinly sliced and toss to combine;
Just before serving , toss 2 small bunches of arugula, stems discarded, with pear mixture and served with spiced nuts.
I didn’t have any arugula so I used spinach which I had on hand and used canned pears instead of fresh. Making do with what I have. Walnuts are very good for you.
I think it would also be a good salad to add some cubed cooked chicken to to make it more meal worthy.
It’s still hot here so I’m still enjoying cool refreshing salads.They are good and good for us too.

Back in the 70's I enrolled in a weekend seminar (Silva Mind Control). Even back then, the facilitator stressed the importance of creating a favorite place to go (in your mind) to alleviate stress. Precious photos of precious times!
I think it's easier eating healthier meals in the summer (v. winter), but I know it won't be an easy transition. (Are you allowed to 'cheat' every now and then? *grin*) Since you mentioned it several months ago, I've begun using chopped walnuts in all my salads instead of croutons. Keep safe!
My favorite place is a pine forest in the mountains. can almost breathe in the fresh cold air.
I think I would like your version of the salad and hadn't thought of the walnuts but yum!
