Today is Eat Beans Day which are honored for their high fiber and for being high in protein and low in fat, which makes the one of most heart healthy foods known to man. The USDA recommends that adults eat a least 3 cups of beans every week. Which is about three times more than the average person usually consumes.
There are thousands of different bean varieties . Some of the most popular include, soy beans, lima beans, pinto beans, green beans, black beans, white beans, kidney beans, chickpeas, lentils and black eyed peas.
To celebrate , cook up your favorite bean recipe today for dinner tonight. If you don’t have one handy, there are plenty on line to find. I like easy baked beans and black bean salad.

I so love baked beans, expecially in the summer time. They go very well with hot dogs and hamburgers and are a favorite side at cook outs. It’s nice to know I’m eating something that is good for me and tastes good too. I make baked beans the easy way by using canned pork and beans and spicing them up with some brown sugar, dry mustard, worcestershire sauce and ketchup. I’ve never taken the time to make the homemade variety; But cooking up dry beans and making you own isn’t all that hard at all, it just takes longer.
For the long holiday weekend I decided to make another very easy recipe for barbecue chicken sandwiches. I simply put some barbecue sauce in the bottom of my crockpot and then added some chicken breasts and then covered them with more sauce. I let them cook for 4 hours on low until they were tender and falling apart, then shredded the chicken up and stirred it all together. Makes for a quick and easy sandwich. Now all I have to do is mix together some macaroni salad to have olong with it. This time I decided to make a bacon ranch bowtie pasta salad.
Bancon Ranch Bowtie Pasta Salad.
2 1/2 c. uncooked bow tie pasta
1 oz. ranch seasoning mix
3/4 c. mayonaise
1/3 c. sour cream
1/3 c. milk
8 to 10 slices bacon cooked and crumbled or chopped.
1 cup frozen peas
1 c. cheddar cheese, grated
1 c. shredded carrots
1 c. cheery tomatoes, halved
Cook pasta according to package directions.
Drain and set aside to cook to room temperature
While noodles are cooking, in a large bowl combine ranch seasoning mix, mayo, sour cream, an milk. Whisk until smooth.
Sir in bacon, peas, carrots, and tomatoes into the ranch dressing. Slowly add pasta and stir until covered in dressing and all ingredients are mixed together Cover and refrigerate until serving. I didn’t have any carrots but I did have some broccoli and used that instead. I’m sure any chopped vegetables would do.
Serves 10
I plan on taking it easy this long holiday weekend and if company should drop by I’ll be prepared.

Glad your family got to visit the DC area last year! Yum on the BBQ chicken sandwiches! And you are right, so easy to make! That is interesting with what they recommend with how many servings of beans to get weekly. I do know beans are healthy for us. Might have to incorporate more into our menus.

That chicken sounds so easy and delish, too. Much easier than buying the rotisserie and having to dispose of the bones and waste. LOL-ing on the beans. When we were at the grocery earlier today I was looking (in vain) for canned beets, but all I could see were beans. Never realized how many varieties there are!
