Today is National Peanut Butter and Jelly Day which is one combination that has been a staple in school lunch boxes for over 50 years.
According to one story, American soldiers invented the peanut butter and jelly sandwich during WWII. They decided to combine their bread, jelly and peanut butter rations in to a fabulous treat. When the soldiers returned home after the war, peanut butter and jelly sales soared.
To celebrate today, make this iconic American sandwich for lunch!

Like most, I enjoy peanut butter and jelly. It is a great combination. I like sandwiches for lunch so no doubt will be having one today. PB and a layer of either jam or jelly and bread is easy to make. Thankfully , I have plenty of both on hand here at my house. Grape jelly is my favorite way to fix them, but I have a good variety of jams and jellies on the shelf. All are good.
A survey showed that 2,500 oeanut and butter and jelly sandwiches will be eaten by Americans before graduating from high school. A peanut butter and jelly sandwich make from white bread, with 2 tablespoons of peanut butter and grape jelly, provides 27 percent of a person’s recommended daily intake of fat and 22 percent of their calories.
For something new today I’m going to try making a grilled peanut butter and jelly sandwich to celebrate today. It sounds delicious to me. I’m just making the sandwich as usual and grilling just like I would make a grilled cheese sandwich.
Peanut butter is good and good for you too. It’s high in healthy monounsaturated fats and nutrient rich. It is said to reduce the risk of developing diabetes, it gives you an energy boost, and helps keep blood sugar stable which prevents crashes later on in the day.
It’s hard to believe we’re coming the end of another week and while I haven’t done a lot, at least I did a little and that is better than nothing.

Peanut butter is good and good for you
PB-and-J sandwiches aren't something I crave ... but grilled? That sounds darn appealing!Pardon if I've said it before, but JIF (extra crunchy) is one of my favorite things. I used to travel with it and a big old soup-spoon in my suitcase. :) There's a picture I need to find and share with my son -- the two of us eating PB from the jar in an Athens hotel room because we didn't like the supper. Thanks for the reminder!

Grilling a PBJ sandwich sounds amazing! I may try that! You know at State Fairs they deep fry everything from Twinkies to who knows what! I’m surprised they have tried your idea before!
