Today is National Zucchini Bread Day which is a delicious type of quick bread that is sweet and moist. The primary ingredient is zucchini , but you can also add various other ingrecients. Many people like to add dried cranberries, orange zest or cinnamon to make the bread spicy. Many chefs agree that zucchini bread is a great recipe for beginner cooks because it is so easy to make.
Zucchini is actually a small summer squish. They are usually yellow or green in color and are shaped like a cucumber. In addition to being used for zucchini bread, zucchini are great when grilled or incorporated in stir fry dishes. You can steam it. fry it, bread it or grill it. Any way you cook zucchini, it’s healthy and delicious.

I happen to love zucchini any way it’s cooked. And I love to fix Zucchini Bread as much as I love banana bread. They are both sweet and most. Quck breads are about the only kind of bread I make. I’ve never been much good at making bread that requires yeast to rise.
So today I thought I’d share a recipe for qucik and easy zucchini bread. Although it isn’t zucchini season it’s always available at the grocery store most any time of year.
Easy Zucchini Bread
3 eggs
2 c. sugar
1 c. vegetable oil
1 tsp vanilla
2 c. coarsely grated zucchini , loosely packed
2 c. flour
1 tsp cinnamon
1 tsp baking soda
1/4 tsp baking powder
1 tsp salt.
1/2 c. chopped walnuts or pecans, optional.
Preheat oven to 350 degrees. In bowl of electric mixer, beat 3 eggs until frothy. Gradually add 2 cups sugar. Stir in 1 cup vegetable oil and 1 tsp. vanilla . Beat until thick and lemon colored. Stir in Zucchini.
In medium bowl whisk together to combine 2 cups flour, 1 tsp. cinnamon, 1 tsp. baking soda, 1/4 tsp baking powder, and 1 tsp. salt. Stir dry mixture into wet mixture and stir to combine. Add chopped walnuts or pecans if desired.
Spray two loaf pans with baking spray or grease and flour to prevent sticking. Pour batter into pants bake for about 1 hour or until done. Allow loaves to cool in pan for 10 minutes and then run a knife along the sides to loose bread and remove from pans. Brush tops of loaf with melted butter while still warm.
Since it’s Saturday and I’ll be cooking for the weekend today, I’ll be sharing another recipe so today you get two instead of one. I happen to have a pork roast in the freezer so that’s what’s cooking here today. I plan to have hot pork sandwiches with the roast. So that is what’s cooking today.
Crock Pot Pork Roast and gravy
1.5 lb. pork loin
10.75 oz. can of cream of mushroom soup.
1 package pork roast gravy mix
1/2 c. water.
Place pork loin in crock pot
Spoon soup over roast
Sprinkle gravy mix evenly over top
Pour water over the top of everything.
Cover and cook on low for 5 to 6 hours
Remove roast fron crock pot and give your gravy a good stir and pour over the pork loin in your serving dish.
Makes 6 servings.
I’ll be placing mine over slices of bread for a hot pork sandwich with gravy with a side of mashed potatoes.
Today’s pictures are of the fresh produce we got from the farmer’s market last summer, makes me wonder if they’ll be open at all this year.

What’s New at My House

Zucchini is good any way you fix it.
We eat a lot of zucchini in a variety of ways. Always good! I like your crock pot pork recipe! Sounds super easy. Probably will try it especially since we are heating up here so we won't be using the oven much in the coming months. I did see that there were some farmer's markets here but I think they are not having as many vendors and limiting numbers of people who come in.

Those veggies look scrumptious! Knock wood, the Millbrook Farmers Market is supposed to open a couple of weeks and I'm sure looking forward to attending … mask on, of course. We've sure enjoyed pork roasts in the crock pot this Winter; so easy; and like Betty, that doesn't heat up the kitchen like turning on the oven.
