Today is National Nut Day which honors an important source of nutrients for both humans and wildlife. Because nuts generally have a high oil content, they are a highly prized food and energy source. Several studies have revealed that people who eat nuts regularly are les likely to suffer from coronary heart disease . Nuts were first linked as protection against CHD in 1993. Since then trials have found that consumption of nuts such as almonds and walnuts can lower serum LDL, cholesterol concentrations.
If you can’t see the bright side, polish the dull side .

Nuts are very good and good for you. I remember the days when nuts came in a bog still in their shell and if we wanted to eat nuts we had to crack them first. I remember helping my mom crack nuts and then seeing her grind them up if she wanted to bake something with nuts in it. Now we are spoiled and have all kinds of nuts available already shelled and even ground up. What a difference the years make.
One of my blog friends shared this recipe for a checolate pecan cake that sounds delicious so I thought I’d share her recipe today in honor of nuts.
Devils Food Coconut Pecan Cake
1 box Devils Food Cake Mix
3 oz pkg. of instant cream of coconut pudding mix
1 c. sour cream
1 c. vegetable oil
4 egg
1/2 c. milk
1 tsp vanilla
1 cup semisweet chocolate chips
1/2 c. chopped pecans
1/2 c. shredded coconut
Preheat oven to 350 degrees. eat together the cake mix, the pudding mix, sour cream, oil, eggs, milk and 1/4 cup chocolate chips. Pour batter in prepared bundt pan. Sprinkle top with remaining chips, pecans and coconut. I’m thinking that since it’s a bundt cake the top of this cake would be the bottom.
Bake for 30 to 45 minute or until tooth pick inserted comes out clean. Let cool before inverting to a serving platter.

Mighty oaks from small acorns do grow...
I was at the store the other day and saw the whole nuts in bags by the baking section. I too remember helping my mom crack nuts and shell them for the various recipes she would make. Always a fun activity to do! So true, too, that nuts are very healthy to eat, but have to be careful because they are high in calories. A little goes a long way with them :)

I used to buy shelled pecans by the 5 pound bag long years ago. Our church ladies got together so we could buy in bulk.
We have two trees but the harvests have not been great for the last 5 years. Due to heat, drought and who knows what!
I baked the cake in a 13x9 pan. It seemed to me that the topping should be on top since the browned coconut and pecans look so pretty.
Everyone liked the cake at the nursing home and I took what was left to my daughter’s house that night and that took care of what was left!
I got the recipe from Estelle’s. Wonder if Betsy baked in in a bundt pan?

So, we just returned from Wal-Mart where I made it a point to buy a big bag of shelled walnuts. I'm going to start putting some in a zip-lock baggie every workday for a quick shot of energy. Thanks for the suggestion!
Hello, made the Devils Food Coconut Pecan Cake but substituted applesauce for the oil and was ever so moist. However, like you mentioned, think if I ever make again, will put the nuts, chips and coconut on top versus bottom of bundt pan as mine kinda broke away, but still delicious!
