Today is National Bologna Day which honors a special type of sausage that originates from Bologna in Italy. It is an unofficial food holiday. Bologna or Baloney is usually made of pork but can also consist of chicken, beef or other meats. Most often it is eaten as a cold dish on a sandwich with mustard or ketchup as s topping. There are many different variations including German balongna and Kosher bologna
Americans eat 800 million pounds of bologna annually. Bologna is a very popular luncheon in many countries and deserves it’s own Bologna Day. Add a slice or two to your sandwich today and celebrate!.

I especially like a fried bologna sandwich and often have it with lettuce and tomato just like a BLT sandwich. But I did find a recipe that is quite different.
Fried Bologna Sandwich
Makes 2
2 Tbsp spicy brown mustard
1 Tbsp. Mayonaise
1 Tbsp. finely chopped dill pickles, plus 2 Tbsp brine
Freshly ground black pepper
7 oz. thinly sliced balogna
4 shlices rye bread
a few leaves of iceberg lettuce, torn to size of bread
Mix mustard, mayonnaise, and chopped pickles in a small bowl to combine. Season with salt and pepper.
Arrange half of bologna slices in a neat stack. Starting near the center and working toward the edges of the stack, cut four 1 inch long slices , spacing evenly. Repeat with remaining bologna. This prevents the meat from bubbling up in the middle when frying. Heat a large skillet , preferably cast iron over medium high. Working in batches, arrange bologna slices in a single layer and cook until browned all over and crisp. Transfer to plate as they are done. Arrange bread in single layer in skillet and cook over medium high until golden. Transfer to cutting board.
To build sandwiches , spread mustard mixture evenly over each slice of bread. Divide bologna between two slices and top with lettuce. Drizzle with pickle brine. Close up sandwiches and cut in half.
This is something I’ll be having for lunch today and hope you do too in order to celebrate. This is a southern classic and truly good comfort food. Of course there are many different variations. You can fix yours your favorite way.

How fun at Boo at the Zoo! I haven't had a bologna sandwich in years, but loved it when I was growing up!

I too like bologna sandwich but with only lettuce) Cute pictures at the Boo at the Zoo.
I never heard of fried bologna until I met Tom. Throughout all my brown-bag school years, my mom prepared a bologna sandwich with a little lettuce on buttered bread. I still like bologna, but I substitute the butter for mayo. Darling pictures!
