ON THE BRIGHT SIDE
FOR SATURDAY, OCTOBER 26TH,2019
The moments of our lives may be bright with possibility, dark with fear or sadness, or even plain everyday gray, but God's glory never fades. May God's glory shine into the exciting lights, upsetting darks, and boring grays of your every day.

Today is Make A Difference Day which is a day of Community service and a celebration of neighbors helping neighbors.
Community service is a donated service or activity that is performed by someone or a group of people for the benefit of the public or its institutions. Performing community service is not the same as volunteering since it is not always done voluntarily.
Today is the perfect day to get a school or youth group together for a volunteer activity to help the community.
Today is also National Pumpkin Day
THOUGHT FOR THE DAY
How wonderful it is that nobody need wait a single moment before starting to improve the world.
Anne Frank
When I was younger, I worked with both the Boy Scouts and our Church Youth Group and between these two, we did a lot of community service. I can truthfully say I’m very proud of our youth and all they do. But we can all make a difference every day is some small way no matter what age we are.
A simple smile and a cheerful greeting can go a long way to making a difference in someone’s day. A kindness shown can change someone’s life for the better. No doubt about it. It takes each of us to make a difference for all of us.
Today is my day to cook for the weekend and today I’m cooking up some Goulash
Hungarian Goulash
2 tbsp olive oil
1 onion, chopped
1 sweet red pepper, seeded and diced
3 cloves garlic, minced
1 bay leave
3 lbs beef stew mat cut into 1 to inch cubes
3 tbsp. Hungaria Paprika
3/4 tsp. salt
1/4 tsp pepper
1 c. beef broth
3 tbsp. tomato past of 1 6 oz can
Heat olive oil in large soup pot over medium heat. Add onions and red pepper and cook until soft. Add minced garlic and bay leave and continue to cook for 1 minute.
Add beef to pot and stir in paprika, salt and pepper. Cook, stirring often , until meat is browned . Stir in broth , tomato paste. Bring to a boil, reduce heat to medium low; cover and simmer until meat is tender. About 2 hours. Remove the bay leaf.
You an also transfer mixture to slow cooker. Cover and cook on high for 4 hours or on low for 8 hours.
Serve over cooked egg noodles and garnish with fresh chopped parsley. For a creamy goulash, add a dollop of sour cream.
Today is supposed to be rainy and chilly so this warm meal will hit the spot. And since it’s National Pumpkin Day I’ve got more pumpkin pictures to share. This time in the form of Jack O’ Lanterns.
To make a difference in someone’s life, you don’t have to be brilliant, rich , beautiful, or perfect. You just have to care enough and be there.

I hope you all have a SUPER Saturday!
COUNTING MY GIFTS
I am only one, but I am one. I cannot do eery thing, but I can do something. And I will not let what I cannot do interfere with what I can do.
Edward Everett Hale
Counting at least 3 things every day that I'm thankful for. There is truly is always something to be thankful for.

may the power of your love
enable them to return home in safety

Such a fun time of year. It's a feast for the eye.s
I thank you for always having a word of cheer and encouragement to all who visit here!
And thanks for that Goulash recipe! I took a screen shot of it! We go back home early next week and I’ve invited a dear friend and her daughter for lunch on Thursday. My two best menus have already been served to them this year so I woke up this morning thinking about what I would cook. Just happen to have a big package of stew meat in the freezer so that was a Win! WIN!! It’s been years since I made Hungarian Goulash! Happy cooking to you! Your house is going to smell so good!
I've never had Hungarian Goulash before, but this recipe sounds wonderful!
Those are some amazing pumpkin carvings your family(?) created. The arts-and-crafts muse skipped me over, but I still enjoy watching others' creations.
PS - Looking forward to joining you and Jack and Sherry at Nana Diana's CROWDED Thanksgiving table! :)
Those are great pumpkins that were carved! I like your recipe! It is always good to get out there and volunteer or help out as you can to others! Always appreciated and always needed.
