Today is Old Farmer’s Day which honors the contributions of farmers through our history. Farmers have always been important as they provide food and raw materials .
October is a good month for farmers to celebrate. At the time most of the harvesting is done and they have time to take a break and celebrate their contributions. Even if you are not a farmer take this day to appreciate the hard work of famers all over the world to provide sufficient food.
If you can’t see the bright side, polish the dull side .

The pictures today are of what was once my grandparents farm. They were taken when I went to one of my aunt’s funeral, a little over two years ago now. I spent many happy days as a child on their farm and learned a lot that I wouldn’t have been able to otherwise. Life on a farm is very different that living in the city and I got to experience working in the garden, feeding the chickens and gathering eggs. I got to sit on a swinging bridge and fish for blue gills in the creak and thanks to my grandmother I learned how to make buttermilk biscuits. I think the list could go on an on, but truly I’m thankful for my time on the farm.
Since I’m older now and have lived in the city for many years, I’ve found my heart is really in the country. I love the simpler way of life. Although it is a lot of work, it is very rewarding.
Today is my day to cook for the weekend so I thought it appropriate to share a country dinner recipe.
Country Fried Steak with Green Beans and Rice
2 c. white rice
2 large eggs
1 c. pause 1 tsp. flour
1/2 tsp. paprika
4 minute steaks each about 1 oz.and 1/4 inch thick, similar to cube steaks
salt and pepper to taste
1/4 c. plus 1 tsp. olive oil
1 1/2 c. milk
1 onion
3/4 lb. green beans
Preheat oven to 250 degrees. Cook rice according to package instructions, cover and set aside. In a wide, shallow bowl, beat eggs , combine 1 c. of flour with paprika. Season eggs, flour mixture and steaks with salt and pepper. Dredge each steak in flour, then dip in egg, allow extra to drip off and then dredge in flour again.In large cast iron skillet, heat 1/4 c. of oil over medium high heat. Cook steaks until crust is golden. Transfer to baking sheet and place in oven to keep warm.
Pour off all but 1 tablespoon oil from skillet Add remaining flour, cook, whisking until golden . Gradually add milk while whisking raise heat to high and boil until thickened. Season gravy with salt and pepper. Cover and set aside.I like to let the steaks simmer in the gravy
In a medium skillet, heat remaining tsp. of oil over medium high. Add onion and cook stirring occasionally until softened. Add green beans and 1/3 cup water; cover and cook until green beans are crisp tender and onion begins to brown. Reheat gravy. thining with milk if necessary. Serve steak with green beans, rice and gravy.
Makes 4 servings.
It used to be I’d have to double the recipe for the family, but now this recipe will make at least 2 meals for me, maybe more.

Remembering always my grandfather, the farmer in my life.
Farming is hard work! Farmers never seem to get a day off. Always something to do around the farm with crops or animals! That recipe looked good! Always looking for new things to try, so I think I'll make that down the road this fall!

I remember my mother lamenting how hard her dad and mom worked to support their little farm operation. I only remember the good times, tagging along as he'd feed the hogs and milk the cows. Now you've prompted me to recall those odd-but-not-unpleasant smells.

I come from a long line of farmers and when I grow something from seed, you may laugh, but it just feels so natural for me to do so! Country Fried steak...it is about 3:30 AM and I could eat some right now!😄
Farming is indeed a different kind of life. My grandparents and uncles farmed in Montana and all though I didn't get to spend a lot of time there I did experience it a little. The thing that struck me the most was that most of the conversation was about the weather since it could make or break the crops. Your dinner sounds wonderful...I will be right over:)
