Teachers play a critical role in educating and shaping children’s lives and deserve to have some appreciation shown. Celebrating this day is easy, simply say thank you to a teacher.

There are several teachers in my family and I know just how dedicated they are. Even when they are not working at school, they spend a lot of hours in preparation for their classes and grading papers too. It’s not an easy job but a rewarding one knowing that you’ve made a difference in a child’s life.
We had a beautiful day with Sunshine and warm temps in the 70’s yesterday, but today we’ll be in the 50’s and they say we’ll have some rain too, so it’s good day for me to work inside. My leftovers from the weekend are now a thing of the past and I’ll be cooking again. Not everyone likes leftovers, but when I plan a meal, I make enough to have more than once.
I had some breaded chicken tenders in the freezer so I looked for different ways to make them and this is what I found. Another new recipe to try out.
Chicken Parmesan
Serves 8
2 1/2 lbs. breaded chicken tenders
1 tbsp. vegetable oil
3 cloves garlic
1 c. onion, diced
4 roma tomatoes, chopped
15 oz. can diced tomatoes
16 oz. tomato sauce
2 tbsp. tomato paste
1 1/2 tsp. salt
1/2 tsp. pepper
2 tsp basil
8 oz. mozzarella cheese, sliced
8 oz. spaghetti
Prepare chicken tenders according to package directions on a foil lined baking pan. Prepare pasta according to package directions.
While chicken and pasta are cooking, heal oil in skillet over medium heat and sauce garlic and onions. Add tomatoes and heat for 5 minutes. Stir in the cans of diced tomatoes and sauce and bring to a boil. Cook for 5 minutes then reduce heat to low and stir in tomato paste, salt, pepper and basil and continue to heat for 10 minutes.
When the chicken tenders are cooked remove from oven and place mozzarella cheese on each piece.and cover with 1/4 cup of basil tomato sauce. Return to oven and heat until cheese is malted.
Serve over prepared pasta
Since I’m cooking for one, I’ll be cutting the recipe in half, and I’ll still have enough for some leftovers.
It’s hard to believe that another school year is almost over now and last year we celebrating some graduations from high school for some of my grandchildren and that is what the pictures are of today.

The great thing is that we never get too old to learn something new!
Loved seeing you and the two grands! Louis Dean was a second grade school teacher for 25 years. His wife was a special ed teacher. Between the two of them, they rescued and inspired many a child. They always taught in small towns with little resources. He calls the towns ‘Donkey Flats!’.
I admire you cooking for one. I think I would do that, too.....at least I hope I would.

Whoa! I'm scratching my head, trying to grasp (that) another school year's almost over! Here at my house, we're all about preparing enough to enjoy left-overs. Fortunately, we rarely enjoy the same things, so there's no squabbling over who gets the last piece. Ha!
I love leftovers. I am like you, Ma. I rather cook a big quantity and have them for leftovers then cook every night. They seem more tastier too the second day around. Always admire teachers! They do have a big responsibility to try to teach kids and often do have to use a lot of their own resources for things in the classroom. Our schools finish up here in about 2 weeks. Hard to imagine, like Myra said, that another school year is winding down. We got some unexpected but welcomed rain this morning and cooler temps so its nice!
