Today is also National Vanilla Pudding Day which is a day to honor this creamy pudding we know and love . Most historians agree that our mondern day recipe evolved from custards that date back to Ancient Rome.
Jello introduced the first line of instant pudding in the 1950’s. It was promoted to be a busy day dessert.
To celebrate today make some homemade vanilla pudding from scratch or from an instant mix. For an extra special treat, pair it with fresh fruit or chcolate yum!

THOUGHT FOR TODAY
This son's birthday is another long distance celebration. But as always a card was sent out the mail wishing him a very happy Birthday.
When the babes were growing up, pudding was often on the menu for dessert. I liked it because it was quick and easy to fix. We had dessert every evening after supper and I would add some fruit and a little whipped cream on top to jazz it up a bit.
The pudding recipe below is a no bake dessert that is quick and easy.
Chocolate Eclair Dessert
2 8 oz packages of instant vanilla pudding mix
2 individual packages of graham crackers
3 c. milk
1 8 oz. container whipped topping
16 oz. prepared chocolate frosting
Line the bottom of a 9 by 13 inch pan with graham crackers. In a large bowlcombine pudding mix and milk; stir well. Mix whipped topping into pudding mixture. Spread half of mixture over graham cracker layer and top with another layer of crackers and remaining pudding.
Top all with a final layers of crackers and frost with chocolate frosting. Refrigerate at least 2 hours before serving to allow the graham crackers to soften.
After a very cool start to the week we are to be warmer again today. The roller coaster ride of Spring hasn’t stopped yet and the forecast also calls for more rain.

Happy Birthday blessings to your sweet #4! I've always loved vanilla pudding; and, in fact, it was my 'go-to' when my parents and I ate at Furr's cafeteria. The éclair recipe sounds amazing … Tom would love this. I like that you don't have to boil or bake. HA!
Your recipe sounds delicious! Both jello and pudding were a delightful part of my life when I was growing up. We usually didn't have dessert after dinner. However, my mom usually had a bowl of either jello or pudding in the refrigerator and my brother, sister, and I usually went looking for it as a snack when we came home from school. I also remember my mom making chocolate pudding and my brother and I used to argue over who got to lick the spoon. Her solution to that was to give one the spoon and the other the bowl to clean out!
Happy birthday to DDS#4! Hoping he had a great day! We had dessert every evening too after dinner. Often too it was Jello or pudding; both favorites of mine!
