Life is a Special Occasion!

Today is National Strawberries and Cream Day which is a simple combination of fresh sliced strawberries and homemade whipped cream that has been popular for centuries. In fact it was customary for newlyweds in medieval England to enjoy strawberries and cream for their wedding breakfast.
The strawberry is the first fruit to ripen every spring and each refreshing bite contains high levels of Vitamin C, fiber, folic acid, and potassium.
To celebrate today head out to a local farm and pick your own fresh strawberries or pick some up and have a delicious snack or dessert made with strawberries.

I do love fresh strawberries and like them served up with some shortcake, ice cream and a layer of whipped cream on top. Some people like their strawberries plain, or on top a slice of sponge cake, or angel food cake but I like shortcake the best.
Strawberry Shortcake
2/3 c. sugar
1/4 c. shortening
1 egg
1 tsp. vanilla
1/4 tsp. salt
1 1/2 c. flour
2 tsp. baking powder
1/2 c. milk
1 c. heavy whipping cream, whipped
1 1/2 quarts fresh or frozen strawberries, sliced
Cream sugar and shortening. Add egg and vanilla; beat well . Combine dry ingredients add alternately with milk to creamed mixture. Spread in greased 9 inch square baking pan. Bale at 350 for 20 minutes. Cool.
Cut into nine servings. Split each serving and fill with whipped cream and strawberries. Top with whipped cream and more berries.
Today’s pictures are of playtime with one of my granddaughters, our little Precious One. She’s out of school for the year now but everyone else is still in for one more week, so I get the privilege of spending some time with her this week.

My hubby LOVES his strawberries and shortcake. Your Precious One is sure a cutie patootie! I know you're loving the time together.
How sweet with your granddaughter! I'm sure you had fun spending time with her! I didn't know this about the wedding breakfast back in the medieval times. I do like strawberries though!

I was here this morning visiting but I was on my phone and could not remember my Google password! Your granddaughter is truly precious! I intend to use your shortcake recipe on Thursday! Louis Dean bought two big cartons of strawberries and I am now so hungry for shortcake I can hardly wait!!
