Happy Anniversary to DS#3 and his wife today!

Anniversaries are reminders of the promise that couples have fulfilled in the past, the ones they are making in the present and those that are store for the future.

Today is also Visit your Relatives Day, which is a day for visiting with family.  In today’s fast paced lifestyle, it is easy to lose touch with the people we care about. Sometimes we only get to see relatives around the holidays and if they live really far away, you may not get to see them at all.

 If you cannot visit, give them a call or send them an email. Because even if your relatives don’t live close by, they are for sure thinking about you.

There is a special connection that binds family together.  They provide a support system to get you through the hardest of times and they are there to celebrate and create memories during the important life milestones. 

We need our families and they need us.

Todays anniversary celebration is another of my long distance celebrations.  Most of them are. But a card was sent out to them, full of love, congratulations and best wishes.  Remembering wedding anniversaries is important.  They mark a very special time peoples lives. 

With their marriage we gained another member in our family, which seemed to grow in leaps in bounds for many years.  My family includes a lot of people and I love having a large one.  My children are all married and have families of their own, and they are all a part of the family.

This Saturday I’ve decided not to cook for the whole weekend because it’s warmer I’ve sandwiches and salads on my mind.  They don’t always make for good leftovers and are often better when they are fresh.

I’m making a classic BLT sandwich with a twist. You see I’m fresh out of sandwich bread, but I do have biscuits.  

You simply split biscuits in half and arrange tomato slices, bacon and lettuce on a biscuit half.  Add a bit of mayonnaise and top with the remaining half of biscuit. It’s delicious!

I don’t like to run out to the store every time I’m out of something, so I make do with what I have.
