Today is Cinco de Mayo Day which means the fifth of May in Spanish. It commemorates the Mexican army’s victory at the Battle of Puebla during the Franco Mexican War in 1862.
Over the years it has evolved into a huge festival celebrating Mexican Culture and heritage in the U.S.. People mark the day with elaborate family feasts and parties.

THOUGHT FOR TODAY
Fiesta like there is no maƱana.
While I don’t have any Mexican heritage, I still celebrate this day because I love Mexican food. I made a taco pie for the weekend and will probably also be snacking on some salsa and chips. It’s wonderful to live in a country of such a wide variety of people sharing their festivals and foods.
I happened to be at DS#6’s house last year for Cinco de Mayo as they were having a party so that is what the pictures are of today.
I found a new recipe for refried bean dip to share in honor of the holiday.
Hot Bean Dip
1 8 oz. pkg. Cream Cheese, softened
1 c. sour cream
2 16 oz. cans refried beans
1/2 pkg. taco seasoning mix
2 tbsp. dried parsley
1/4 c. chopped green onions
8 oz. shredded cheddar cheese
8 oz. shredded Monterey Jack cheese
5 drops hot pepper sauce, optional
Preheat oven to 350 degrees. In a medium bowl, blend cream cheese and sour cream. Mix in the refried beans, taco seasoning, hot pepper sauce, parsley, green onions and 1/2 of the Cheddar cheese and Monetery Jack cheese. Transfer mixture to an 8 by 12 baking dish. Top with remaining cheeses. Bake in preheated oven for 20 to 30 minutes until cheese is slightly browned.
I don’t like things too spicy so I’ll probably forgo the hot sauce and will also cut the recipe in half because it makes a lot.
They say that we’ll be having some nice Spring weather for today and tomorrow. It’ll be a delight to get out and about in the sunshine. Today I’ll be off to church as usual and tomorrow morning, I’ll be having breakfast with a friend that I’ve not seen in awhile. I’m hoping we’ll dry out a lot from all the rain we’ve had so I will also be able to mow some grass on Monday.

Happy Sunday! Celebrate!
Happy Cinco de Mayo! I called hubby over a little while ago … and we're SO making this creamy hot bean dip! Probably I'll use my small crockpot. The cheese won't brown, but I'm not ready to heat up the kitchen any more so than Mother Nature. :)
That bean dip looks good! We went out and celebrated a day early for Cinco de Mayo yesterday, trying a new Mexican restaurant here. Food was good! Its always fun to celebrate holidays like this!
